Slow Cooker Christmas Jam Recipe

cranberries ((about 6 cups))

Add everything to the slow cooker and stir.

Cook on HIGH for 4 hours without opening the lid during the cooking time.

When the cooking time is up, add the contents from the slow cooker into a blender. Pulse until a jam forms. DO NOT OVER BLEND OR YOU WILL MAKE CRANBERRY BUTTER.  You can use an immersion blender if you choose.

The jam will thicken a lot while it cools, don&#39;t fret. Cranberries have pectin in them.

Add the hot jam to jars or plastic freezer containers. Serve within 2 weeks or freeze. This is not a canning recipe.

Liquid Fruit Pectin

Place the strawberries and cranberries in a food processor and pulse the ingredients into large pieces but do not puree.

Pour the mixture into a large pan or dutch oven.

Stir in the orange zest, cinnamon, cloves, all spice and granulated sugar.

Bring the mixture to a boil (stirring frequently).  Then boil the mixture for 1 minute.

Remove the pot from the heat and stir in the liquid fruit pectin.  Bring the mixture back to a boil and boil for 1 more minute (stirring constantly).

Remove the pan from the heat and let it cool for 5-10 minutes.  Skim the foam off the top of the mixture.

Pour the mixture into a storing jar leaving approximately 1/4 inch of space toward the tops.

Wipe the rims on the lids clean with a cloth and place the lids on top.  Process the jar in a water bath for 10 minutes.

Remove from the water bath and clean off with a clean towel.  Let the jars sit at room temperature for 12 hours. Then check to make sure that the jars seal correctly.

For any jars that did not seal, refrigerate for up to 1 month.  The remaining sealed jars should last in a cool dark place for up to 6 months (refrigerate after opening).

To a large saucepan, add the cranberries, sugar, strawberries, orange zest, and bring mixture to a boil over medium heat, stirring a lot in the beginning since there is no added liquid and you need to help encourage the fruit to break down and release its natural juice. Tip - Use a high sided saucepan and err on the side of bigger rather than skimping. Jam will sputter and bubble up and it&#39;s less messy and simply easier to have enough &quot;room&quot; in your saucepan.

Reduce the heat to low and allow the mixture to simmer for about 15-20 minutes, or until the cranberries have burst and the strawberries are soft; stir very frequently and scrape down the sides of the saucepan with a spatula as needed. Tip - If you&#39;re using frozen fruit, you don&#39;t have to thaw it first and can add it straight to the saucepan. However, the cooking time will increase by 10 minutes or so because you&#39;re starting with frozen ingredients.

Optional: Remove the saucepan from the heat and carefully blend the mixture using an immersion blender until it reaches your desired consistency. If you&#39;re not doing this, just keep the pan on the heat.

Return the pan to the stove, sprinkle the Jell-O on top, stir it in to combine, and allow the mixture to simmer for 1-2 minutes.

Allow the mixture to sit off the heat (but still in the pan) for about 10 minutes to allow it to thicken slightly. Thickening Tip - Note that jam will continue to thicken as it sits and cools to room temp (step 7 below) so don&#39;t be alarmed if it seems a bit thin or runny now when it&#39;s still quite warm.

Ladle the jam into clean freezer-safe containers, leaving about 1/2-inch of     headspace at the top of each container to allow for expansion during     freezing. If you have a funnel, it may be helpful, too.

Allow the jam cool to room temperature (depending on the temp of your kitchen, this could be 30 minutes or it could be 3 hours), and then seal the containers with lid and place the containers in the freezer. Storage and Gifting Tips - I usually freeze 3 and keep 1 in the fridge (using 8-ounce containers). If you&#39;re gifting this, I would keep place it in decorative jars, and store in the fridge until you&#39;re ready to gift it, up to about a week in advance. However, if you know you&#39;re not gifting it for many weeks, then place it in freezer-safe containers and store it in the freezer until you&#39;re ready to gift it.

When ready to use, thaw the jam in the refrigerator. Once thawed, store it in the refrigerator and consume it within about 2 weeks, noting there are no artificial preservatives added so always use your own judgment.

Prepare 4 pint jars or 6 half-pint jars for canning.

Zest the orange and set the zest aside.

Peel the orange, remove any seeds, and roughly chop the sections.

Prep the Orange:

In a food processor, coarsely chop the cranberries first.

Add the chopped strawberries, chopped orange sections, orange zest, cinnamon, allspice, and cloves.

Pulse a few times until everything is finely chopped but not pureed.

Process the Fruit:

Transfer the fruit mixture to a large stock pot and add the water.

Stir in the pectin and 1/2 tsp of butter, to reduce the foam.

Stirring constantly, bring to a rolling boil.

Once at a rolling boil, stir in the sugar.

Return to a rolling boil, stirring constantly, and continue to boil for 1 minute.

Cook the Jam:

Remove from the heat, skim foam, and ladle the jam into hot jars, leaving 1/4 inch headspace.

Jar the Jam:

Process in a water-bath canner for 10 minutes.

Remove from canner and place on a towel or wooden cutting board for 12-24 hours being careful not to turn, shake or move the jars.

Water Bath Processing:

Put a small plate in the fridge to chill. Tip the cranberries, orange zest and juice, the star anise, cinnamon stick, cloves and sugar into a heavy-based saucepan. Bring to the boil. Unless your using low or no sugar Certo, I wouldn't cut back the sugar. I cut it back and the jam didn't jell.

Process.

Place strawberries and cranberries in a food processor and chop. Leave small chunks of fruit, and do not puree. Jelly is pureed and perfectly smooth, jam is not and has chunks of fruit in it.

Heat.

Place chopped fruit in a large heavy bottom pot - I use a dutch oven pot. Add sugar and orange zest. Stir while it heats up and bring it to a full rolling boil. Once it reaches a full boil, boil for exactly 1 minute. Remove from heat and stir in pectin. Return to heat and return to a full rolling boil and boil for exactly one more minute, stirring constantly. Remove from heat.

Cool.

Let cool about 5 minutes then skim off the foam. Carefully ladle the mixture into sterilized half pint size jars, leaving 1/4&quot; space at the top. Wipe the rims clean with a cloth damped with warm water. Place lids on top and secure.

Water Bath.

Process in a water bath for 10 minutes. See note 6. Carefully remove the jars and place somewhere they can sit completely undisturbed.

Let stand, completely undisturbed for 12-24 hours. After 12 hours you can check the seals to check for sealing. If the lid gives or remains popped up, place it in the fridge for immediate use. If the jars have properly sealed they can be stored in a cool, dark place.

It’s fine if you still have some larger chunks of fruit – you can mash them with a potato masher or a wooden spoon while they’re cooking. You don’t want the fruit totally pureed, because this is jam (not syrup or jelly!) – and it should have some chunky pieces of fruit throughout.

Transfer the fruit to a large Dutch oven. Add orange zest, cinnamon, cloves, allspice and sugar. Bring the mixture to a full rolling boil, stirring occasionally. Once the mixture comes to a full rolling boil, continue the boil for exactly 1 minute. Remove from the heat; stir in pectin and return to a full rolling boil. Once the mixture returns to a full rolling boil, set a timer and boil for exactly 1 minute, stirring constantly. Remove from the heat.

Cool for 5 minutes; skim off the foam. At this point, the mixture will still be quite thin – it will not look like a thick jam. That’s fine! It will thicken and set as it cools. Carefully ladle the hot mixture into hot, sterilized half-pint jars, leaving ¼-inch of headspace. Wipe the rims clean with a damp cloth; secure the lids.

Process in a water bath for 10 minutes. Carefully remove the jars to a towel on the counter.

Let stand, undisturbed, for 12 hours at room temperature. Check the seals after 12 hours by pressing the center of the lids. If the lid gives or the center button remains popped up, store in the refrigerator for up to 1 month. Properly sealed jars will keep in a cool, dark place for up to 8 months. Refrigerate after opening.

This is an incredibly delicious jam!! Wowwww...I think this is the best tasting jam I have ever made. I weighed my fruits on a scale. Used fresh strawberries and frozen cranberries because you can't find fresh crans this time of year. The orange zest is a must. Followed the recipe exactly.
