water

sugar

cloves

rosemary simple syrup

pomegranate juice (cranberry juice is a good sub)

club soda lime

Heat the water, sugar, rosemary, and cloves in a saucepan over medium high heat. Bring to a low boil and let everything simmer for 5-10 minutes until the sugar has fully dissolved. Pour through a fine mesh strainer to remove the cloves and rogue rosemary leaves. Transfer to glass jars and store in the fridge for 2 weeks. (I often stick a sprig of rosemary in there so it keeps getting more intense.)

Pour your desired ratios of rosemary syrup, pomegranate juice, and limey bubbly water over an ice ball into a glass. Stir gently, taste and adjust, and enjoy.

Cherry Mojito Mocktail

Cherries (roughly chopped)

Lime (quartered)

Mint leaves

Sparkling water

Place chopped cherries and lime in a glass. Add a little sweetener if using. Muddle together for about 1 minute. If you don&#039;t have a muddle, use the back end of a wooden spoon. The idea is to get it small enough to fit though a straw.

Clap mint together in your hand to release the scent and add to the glass. Press gently with a muddler a few times.

Add ice and top with your choice of sparkling drink.

Garnish with lime wheels, mint and/or extra cherries

An easy, 3 ingredient festive mocktail for Christmas and special occasions.

Cranberry Mocktail With 3 Ingredients

oz cranberry juice

oz ginger beer ((sub with use ginger kombucha

oz orange juice

oz non-alcoholic rum

Cranberries, orange, rosemary, thyme ((for optional garnish))

Fill your glass/mug with ice, then add the cranberry juice, orange juice and ginger beer. Stir gently and taste. Adjust with more cranberry juice or ginger beer if you wish. Garnish with your choice of cranberries, orange and/or something green like mint or rosemary.

I used 125ml Ocean Spray Light Cranberry Classic. It has no added sugar, so theres only about 1g of sugar in this drink. To reduce the sugar content even further, use less juice and top up with soda or tonic.

You could also replace the soda with non-alcoholic sparking wine - it tastes divine!

A squeeze of lime tastes delicious in this too.
