Festive Recipe for Winter Salad (15 Minutes)

MAKE VINAIGRETTE DRESSING: Combine all ingredients in a jar or sealed container. Shake well until smooth and emulsified. Alternatively, whisk all ingredients together except oil. Slowly add a stream of oil while whisking until smooth.

ASSEMBLE WINTER SALAD: Cut or rip greens into small pieces and add them to a large bowl. Drizzle on dressing - you won&#39;t need it all. Scatter nuts, pears and pomegranate seeds evenly over lettuce. Add small little clumps of ricotta if desired (e.g. 1 teaspoon in size). Serve immediately. If forming into a wreath on a platter, you can serve the dressing in a small bowl in the center of the wreath.

Layered Christmas pasta salad recipe

750.00 ml dried elbow pasta

9.20 gm extra virgin olive oil

bacon rashers, chopped

red cabbage, chopped

can corn kernels,

baby gem lettuces, shredded

tomatoes,

continental cucumber, diced

187.50 ml grated tasty cheese

green onions, thinly sliced

sour cream

mayonnaise

250.00 ml flat-leaf parsley leaves, chopped

lemon juice

23.40 gm wholegrain mustard

Step 1

Cook pasta in a large saucepan of boiling, salted water following packet directions. Drain. Refresh under cold water. Drain well.

Step 2

Meanwhile, heat oil in a large frying pan over medium-high heat. Cook bacon, stirring occasionally, for 5 minutes or until golden. Drain on paper towel.

Step 3

To make the creamy mustard dressing: Combine sour cream, mayonnaise, parsley, lemon juice and mustard in a bowl. Season with salt and pepper.

Step 4

Place cabbage over the base of a 5-litre (20-cup-capacity) glass serving bowl. Top with corn, then half of the pasta. Spoon over 3/4 of the dressing. Arrange lettuce over dressing layer. Toss tomato, cucumber and remaining pasta together. Spoon over lettuce. Drizzle with remaining dressing. Sprinkle with bacon, cheese and green onion. Season with pepper. Serve.
