Pretty greens are studded with crunchy pistachios, sweet and tangy pomegranate arils, and juicy oranges. Topped off with a sprinkling of creamy goat cheese and a refreshingly light champagne vinaigrette. A perfect party salad!

I love this winter salad recipe. It&#39;s festive, the flavors are addictive, it&#39;s got lots of texture and a fabulous citrus sweet and tangy dressing. Ready in 15 minute start-to-finish. Or, with shortcuts, only 5 minutes!

Festive Recipe for Winter Salad (15 Minutes)

romaine lettuce

maple syrup ((or honey))

apple cider vinegar ((or lemon juice))

kosher salt ((or more to taste))

ROAST NUTS. Note 3

MAKE VINAIGRETTE DRESSING: Combine all ingredients in a jar or sealed container. Shake well until smooth and emulsified. Alternatively, whisk all ingredients together except oil. Slowly add a stream of oil while whisking until smooth.

ASSEMBLE WINTER SALAD: Cut or rip greens into small pieces and add them to a large bowl. Drizzle on dressing - you won&#39;t need it all. Scatter nuts, pears and pomegranate seeds evenly over lettuce. Add small little clumps of ricotta if desired (e.g. 1 teaspoon in size). Serve immediately. If forming into a wreath on a platter, you can serve the dressing in a small bowl in the center of the wreath.

750.00 ml dried elbow pasta

9.20 gm extra virgin olive oil

bacon rashers, chopped

red cabbage, chopped

can corn kernels,

baby gem lettuces, shredded

tomatoes,

continental cucumber, diced

187.50 ml grated tasty cheese

green onions, thinly sliced

sour cream

mayonnaise

250.00 ml flat-leaf parsley leaves, chopped

lemon juice

23.40 gm wholegrain mustard

Step 1

Cook pasta in a large saucepan of boiling, salted water following packet directions. Drain. Refresh under cold water. Drain well.

Step 2

Meanwhile, heat oil in a large frying pan over medium-high heat. Cook bacon, stirring occasionally, for 5 minutes or until golden. Drain on paper towel.

Step 3

To make the creamy mustard dressing: Combine sour cream, mayonnaise, parsley, lemon juice and mustard in a bowl. Season with salt and pepper.

Step 4

Place cabbage over the base of a 5-litre (20-cup-capacity) glass serving bowl. Top with corn, then half of the pasta. Spoon over 3/4 of the dressing. Arrange lettuce over dressing layer. Toss tomato, cucumber and remaining pasta together. Spoon over lettuce. Drizzle with remaining dressing. Sprinkle with bacon, cheese and green onion. Season with pepper. Serve.

Preheat the oven to 425°F and line a baking sheet with parchment paper.

Place the squash on one side of the baking sheet and the onion wedges on the other. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat and spread evenly on the baking sheet. Roast for 20 to 35 minutes, or until tender and golden brown around the edges. Remove the onions before the squash if needed. Pull apart the onion layers.

Place the kale in a large bowl and drizzle with some of the dressing. Use your hands to massage the leaves until they become soft and wilted and reduce in the bowl by about half.

Add the radicchio, Brussels sprouts, roasted squash, onions, and remaining dressing. Toss well, then top with the pecans, pomegranates, and cheese. Gently toss. Season to taste and serve.

This salad looks absolutely festive and fresh, the colors and textures feel perfect for a holiday table.
