The perfect Christmas cookie for your holiday cookie exchange! These easy cookies are light, tender and sweet made with pecans and powdered sugar. They are melt-in-your-mouth delicious!

Add the butter in the bowl of a stand mixer and whip on medium speed until light and creamy.

Add ¾ cup powdered sugar to the creamy...

Add ¾ cup powdered sugar to the creamy butter and mix on low to incorporate. Switch to medium high speed and beat until smooth and creamy, about 2 minutes.

Add the vanilla extract to the creamed mixture...

Add the vanilla extract to the creamed mixture and mix until combined.

While the mixer is on low speed, gradually...

While the mixer is on low speed, gradually add the flour one spoonful at a time. Once all the flour is added, turn the speed up on the mixer and beat until well mixed and comes together in a dough ball.

Add the finely chopped pecans. Mix to incorporate....

Add the finely chopped pecans. Mix to incorporate. The mixture will be very thick and pull away from the sides of the bowl.

Cover the bowl of dough with plastic wrap...

Cover the bowl of dough with plastic wrap and chill in the refrigerator for at least 30 minutes or up to 3 days.

When ready to bake, remove the cookie dough...

When ready to bake, remove the cookie dough from the fridge to warm slightly. Preheat the oven to 350F and prepare two cookie sheets by lining them with parchment paper. Pour 1 cup of powdered sugar into a large shallow bowl and set aside.

Scoop out the snowball cookies with a small...

Scoop out the snowball cookies with a small cookie scoop (or by 1 tablespoonfuls). Roll into a ball gently with your hands and place balls on cookie sheet 1 inch apart.

Bake for 12 to 15 minutes or until...

Bake for 12 to 15 minutes or until the bottoms are just starting to turn light golden brown.

Remove the cookies from the oven and allow...

Remove the cookies from the oven and allow to cool for 5 minutes. Then roll them in a bowl of powdered sugar to coat them completely.

Once completely cooled, roll them in powdered sugar...

Once completely cooled, roll them in powdered sugar again. The second coat of powdered sugar should stick very well and give a heavy powdered "snowball" look.

This snowball cookie recipe is a Christmas tradition and my favorite cookie! These melt-in-your-mouth buttery pecan shortbread cookies are baked to perfection and rolled in powdered sugar.

In a stand mixer, using the paddle attachment on medium speed, cream the butter and powdered sugar. Turn the mixer to low and add the salt, vanilla, flour, and pecans. Roll the dough into one-inch balls using a 1-tablespoon scoop. Place on parchment-covered baking sheets a few inches apart. Bake for 8-10 minutes or until very lightly browned. Do not over-bake

Remove them from the oven and allow them to cool just enough to handle them. Pour 1 cup powdered sugar into a medium bowl. Gently roll the cookies in the powdered sugar. Use a fork to scoop under each cookie and gently shake to remove excess powdered sugar. Place on cooling racks. Once completely cooled, roll in the powdered sugar again.

It sounds delicious minus the Unwrapped Hershey Kiss, oops! Lol I’m going to try these with AP GF flour

I took the liberty and exchanged for a low carb version, using Lakanto powdered substitute, unsweetened coconut and almond flour.  They are wonderful!  Just thought others may want that option, nothing wrong with your recipe, classic!

this is one of those recipes that's been in my family since before i was born in 1970. my mom makes them every year and they're one of the first cookie to be totally eaten first. i also make them, but i use an eighth teaspoon of almond extract along with the vanilla and use finely chopped walnuts. Blessings to all!

Buttery Pecan Snowball Cookies

Pecan Snowball Cookies melt-in-your-mouth with their buttery, nutty texture and sweet powdered sugar coating. A must-try for cookie lovers!

Pecan Snowball Cookies

unsalted butter (at room temperature)

In the bowl of a stand mixer fitted with a paddle attachment, combine butter with ⅓ cup of powdered sugar. Cream at medium speed for 2 to 3 minutes, or until light and fluffy.

Scrape down the sides of the bowl and add the vanilla extract. Mix at medium speed for 30 seconds, or until combined. Add the chopped pecans, flour and salt and mix at low speed until no streaks of flour remain.

Set the dough in the fridge for 30 minutes.

When ready to bake, preheat the oven to 350˚F. Line a rimmed baking sheet with parchment paper. Using a 1 tablespoon-sized cookie scoop, scoop the dough into even portions, then roll each into an even ball. Makes about 18. Place on the prepared sheet pan, leaving about 2 inches between each cookie, and bake for 12 to 15 minutes, or until the tops are lightly golden brown.

Remove from the oven and let cool for about 10 minutes, then roll the slightly warm cookies in the remaining powdered sugar. Let cool completely, then dust any remaining sugar on the cookies until they are thoroughly coated.
