Graham Cracker Toffee Bars

Hershey's chocolate bars ((I use two large 7 oz bars))

butter (2 sticks)

brown sugar

pecans

Preheat oven to 350 degrees F. 

Line a 9x13'' pan with parchment paper (or spray with cooking spray.)&nbsp;

Place graham cracker sheets along the bottom of the pan.

Add butter to a large saucepan over medium heat and allow it to melt. Add the brown sugar and pecans, and stir constantly, bringing the mixture to a full boil.&nbsp;

Boil for 5 minutes, stirring constantly.&nbsp;

Remove from heat and pour mixture over graham crackers and spread into an even layer.&nbsp;

Bake for 7 minutes.&nbsp;

While the bars are baking, unwrap the Hershey's chocolate bars and break them into pieces.&nbsp;

Remove bars from oven and carefully place chocolate pieces across the top of the toffee layer. Cover the pan with a lid or aluminum foil to allow the chocolate to melt (5-10 minutes).

Once chocolate has begun to melt, remove the lid and use a spatula to spread the melted chocolate evenly over the bars.&nbsp;

Allow to cool completely before serving. I like to store mine in the fridge to set up (not required) but I leave them out at room temperature for 15 minutes before cutting them, to allow the chocolate to soften.

A melt in your mouth sweet made with chana dal and coconut and mildly flavored with cardamom.

Chana Dal (hulled and split chickpeas)

Salt,

green cardamom pods

coconut, grated (approx. 2 1/2 cups)

sugar

Wash the chana dal by passing it through some water at room temperature 3-4 times. Add enough water to cover the dal by about 2 inches and let it soak for 3 hours. After letting it soak, drain the water, pass it through some fresh water and drain again. Cook the chana dal with 1/8 tsp of salt and sufficient water till soft. Drain the dal and reserve the cooking water. Let the dal cool to room temperature.

In the meanwhile, crack the cardamom pods open and grind the seeds to a powder.

Grease a large tray or board, the back of a large spoon or spatula, a rolling pin and a sharp knife with a little more ghee.

Grind the coconut to a smooth paste using just a little of the reserved cooking liquid from cooking the lentils. Use as little water as you can. Place the ground coconut in a large heavy bottomed pan.

Grind your chana dal with a little reserved cooking liquid to a smooth paste. Again, use as little liquid as possible. Add this to the pan.

Add the sugar to the pan and stir well to combine.

Place the pan on a medium heat and cook till it thickens and starts leaving the sides of the vessel, stirring continuously. As it thickens, drop the heat to a medium low, add the cardamom and 1 tbsp ghee and continue cooking. This process takes around 30-45 minutes.

Once the mix starts forming into a ball, take it off the heat and immediately transfer to the greased tray. Level it using the back of a spoon and tidy it off with the greased rolling pin. Set it aside to cool.

Using the greased knife, cut into the traditional diamond shapes or any other shape of your choosing.

Leave the cut pieces on the kitchen counter to cool down completely and set. Your Chana Doce is now ready to serve or store. Store in an airtight container. This will keep refrigerated for a 6-8 days. Enjoy!

What's your favorite way to drink Baileys?

Set up a double boiler by placing a medium heatproof bowl over a small pot of simmering water. Add chocolate chips and heavy cream and stir until melted.&nbsp;

Turn off heat and stir in Baileys and salt. Refrigerate until chocolate mixture is firm enough to roll into balls, about 1 hour.&nbsp;

In a medium heatproof bowl, microwave white chocolate and coconut oil together in 20-second intervals until melted.

Using a small cookie scoop, roll chocolate into 1-inch balls then place on a parchment-lined baking sheet. Using a fork, dip each truffle into white chocolate, turning to coat. Place back on baking sheet and sprinkle with cinnamon sugar.&nbsp;

Terrible recipe. The semisweet chocolate was still liquid after an hour in the fridge and when left longer was impossible to shape. Once it was dipped into the white chocolate it immediately began to melt and discolour the white chocolate. I'm honestly mad at the ingredients I wasted trying to follow this impossible recipe.

I have made these a few times, they are amazing! A definite crowd pleaser.
