In the rest of the world, especially Asia, peanuts are special, used not only as a garnish but as a main ingredient in sauces. One such sauce incorporates coconut milk and classic Thai seasonings: curry paste or powder, nam pla, lime and cilantro. The coconut milk and peanuts make the mixture too powerful-tasting for most fish and too heavy for most meat. It is perfect, however, when teamed with chicken on the grill, especially boneless thighs.

Chicken Skewers With Peanut Sauce

natural peanut butter, preferably chunky

curry paste

salt

coconut milk, approximately

nam pla or soy sauce

lime juice

Start charcoal or gas grill or heat broiler; fire should be moderately hot, and rack should be at least 4 inches from heat. If using wood skewers, soak them in water.

Put peanut butter in a small saucepan over medium heat; add curry paste or powder, salt and enough coconut milk to achieve a creamy but quite thick consistency. Cook over low heat, whisking, until smooth; do not boil. Cool a bit, then stir in nam pla and lime juice.

Marinate chicken in this mixture for 5 minutes to an hour. Skewer chicken chunks, then grill or broil slowly, until nicely browned and cooked through, 10 minutes or longer. Serve hot, garnished with cilantro and accompanied by lime.

It is SO easy to make and SO much tastier than anything store bought.This is THE peanut butter.  I’m excited that I know how to make this gold from scratch, but disappointed that I have spent 26 years living in peanut butter ignorance. Oven Roasted Peanut Butter

Preheat oven to 350°

Line a baking pan with aluminum foil/parchment paper and spread a single layer of peanuts across the sheet without peanuts overlapping

For peanuts with shell removed it takes about 15 to 20 minutes for them to roast. Stir peanuts every 5-8 minutes so they roast evenly and don&#039;t burn.

The peanuts are ready when they turn a light golden brown you will also begin to smell an inviting roasted peanut smell!

Remove from oven and let cool for 10 minutes

INSTRUCTIONS: Oven Roasting (Raw) Peanuts

Place your fresh roasted peanuts in your food processor and let it run for 5 minutes. *Do NOT add all peanuts if you want chunky peanut butter* set 1 cup of roasted peanuts aside for this!

Peanuts will go from crumbles to clumps to a giant ball to butter

Add coconut oil one tablespoon at a time until you reach desired creaminess ( I use coconut because it adds a nice sweet flavor).

Once you have the desired consistency add honey (or agave) and about a teaspoon of sea salt flakes. Pulse the processor 5 to 7 times to evenly mix.

CHUNKY PEANUT BUTTER*-Add the remaining portion of peanuts and pulse the processor about 5-7 times, so the peanuts get nicely chopped and evenly dispersed. EAT &amp; ENJOY!

Make the best homemade roasted peanut butter.  With just two ingredients, and the optional ingredient of honey, this peanut butter can be made creamy or chunky!

Preheat oven to 350°F (175 degrees °C). Spread peanuts on a baking sheet. Sprinkle with salt and bake until golden brown, about 6-10 minutes. Stir every 2 minutes to get an even roasting.

In a food processor (using a metal blade), scrape baking tray with peanuts and salt, and process for about 2 minutes, or until peanuts start to form a ball.

Scrape sides and reserve 1/3 cup of ground peanuts if chunky peanut butter is desired.

Add honey at this point, if desired, and continue blending to desired consistency, 2-3 more minutes.

Remove creamy peanut butter from food processor and mix reserved peanuts back into the mix (if desired).
