This thick, hearty Vegan Potato Soup is quick and easy to make using simple ingredients and very budget-friendly too. Enjoy it chunky as is, puree it until smooth and/ or get all fancy with toppings.

Vegan Potato Soup

vegan butter (or olive oil,)

onion

celery

carrots

garlic (chopped finely)

salt (Divided

tsp black pepper (plus more to taste)

bay leaf

tbsp all purpose flour (or gluten-free all purpose flour)

vegetable broth/stock

potatoes

tsp miso (Use chickpea miso

green onion, smoky crispy tofu

Heat oil over medium heat in a large saucepan. Add  onions, garlic, celery and carrots with 1/2 tsp salt and sauté 5-7 mins then add bay leaf. Sautee then add flour and sauté for anohter 2 mins. Add in half the milk and mix to pick up all the flour so that there are no dry lumps

Mix the miso in the rest of the milk, add that and the rest of the ingredients, mix well, partially cover and cook for 15-20 mins. Once the  potatoes and veggies are tender and cooked, mash and break some potatoes using a pastry cutter or fork.

Top the soup with vegan bacon or Smoky tofu bacon and chives or green onion. Store the soup in the fridge for upto 3 days

This vegan potato soup combines creamy potatoes, savory onions and celery, and sweet carrots, all simmered together until tender. Finish everything off with a splash of non-dairy milk or heavy cream and your favorite garnishes for an ultra-satisfying bowl.

Chunky Vegan Potato Soup (Made Quick & Easy)

garlic (minced)

thyme

potatoes (~6 medium) (peeled and diced)

sea salt (or

vegan heavy cream

fresh parsley

Sliced green onions

Vegan cheddar shreds

Vegan sour cream

Heat the olive oil in a stockpot over medium heat. Add the diced onion, celery, and carrots and cook them for 7-8 minutes, or until they are tender and soft.

Add the garlic, thyme, and rosemary, cooking the mixture for another minute until the garlic is fragrant.

Pour in the vegetable broth, and add the diced potatoes and bay leaves. Bring the mixture to a boil, then reduce the heat, cover the pot, and simmer for 20-25 minutes, or until the potatoes are tender.

When the potatoes are fork-tender, use a potato masher to mash some of the potatoes in the pot. This will thicken the soup and give it a chunkier texture. If you prefer a smoother soup, you can use an immersion blender instead.

Stir in the vegan heavy cream or plant milk and heat the soup for another few minutes. Remove the bay leaves, and taste and season it with salt and pepper to your liking.

Serve your vegan potato soup immediately with chopped parsley, green onions, vegan cheddar shreds, tofu crumbles, etc. Happy eating!

Simple Potato Soup Recipe

butter

carrot (diced, minced or grated)

yellow onion (diced, minced or grated)

vegetable or chicken broth,

potatoes (about 14 ounces (400 grams), diced small)

heavy cream (adjust

parsley (1 teaspoon if dry)

In a medium pot heat oil and butter over medium heat. Add carrot, onion and garlic. Sauté until translucent.

Add spices and flour. Stir and sauté for 1-2 minutes. Add broth and bring to a boil.

Add potatoes and simmer for 25 minutes on medium-high. Add heavy cream and simmer for another 5-10 minutes.

Garnish with parsley. Serve warm. Keep in the fridge for up to a day. Reheat using your preferred method. Do not freeze!

I was looking for something light on the stomach after all the Christmas overindulgence and came upon this. I had all the ingredients on hand and it was very quick and simple to make. My whole family absolutely loved it.

This is the best recipe. I have now made it many times. Served with crusty bread.
