Cig kofte is one of the most popular and well-known Turkish dishes. They are small bulgur wheat &quot;meatballs&quot; (this recipe is vegan) that are traditionally served as an appetizer with lettuce leaves and lemon wedges. They are spicy, intensely flavored, and just perfect for anyone who loves Middle Eastern foods!

Cig Kofte

köftelik/fine bulgur wheat

water (not boiling water)

Turkish "tatli" red pepper paste

Turkish pul biber/Aleppo pepper

Turkish Isot/Urfa biber

cumin

salt

black pepper

tomatoes (finely diced, including the tomato juice)

garlic

lemon juice

green onions (finely sliced)

parsley

sunflower oil

(iceberg) lettuce, lemon wedges (for serving)

Add the fine bulgur wheat to a very large mixing bowl. Pour the hot water over the bulgur and let it soak for 5 minutes. Don&#39;t worry if the bulgur isn&#39;t soft at this point, it will be perfect in the end.

Next, add the red pepper paste, pul biber, isot biber, ground cumin, salt, and pepper. Knead with your hands until everything is combined.

Now add the tomatoes (including the tomato juice/water), garlic, and lemon juice. Knead again until everything is combined and there are no tomato chunks left.

Add the green onions, parsley, and sunflower oil. Knead one last time until everything is combined and the bulgur mixture is soft.

Now take some of the cig kofte bulgur mixture and shape it into cig kofte with your hands. It&#39;s usually done by having some of the bulgur in your hand and making a fist several times until you have a small sausage-like cig kofte.

Place the cig kofte on a large plate. Serve them with lettuce and lemon wedges. Wrap your cig kofte in a lettuce leaf and enjoy!

An incredibly tasty finger food with fine bulgur, spices, pureed tomatoes, onion and garlic. Packed with flavors, this is definitely a hard-to-resist appetizer.

Turkish Cig Kofte

fine bulgur

sumac

allspice

onions,

tomatoes,

tomato paste

pepper paste

water

olive oil

isot pepper/Urfa biber

red pepper flakes

lemon, juice only

pomegranate molasses

In a large bowl or a tray, combine bulgur, black pepper, cumin, sumac, allspice, pureed tomato, onion and garlic, tomato paste, pepper paste and water. Knead this mixture using your palms for about 2 minutes. 

In a separate bowl, mix together the olive oil, isot pepper and red pepper flakes. 

Pour this mixture along with the lemon juice and pomegranate molasses over the bulgur mixture. Knead it until bulgur is softer and not crunchy at all. This might take 45-50 minutes.

Take about 2 tablespoon of the mixture in your hand and shape it by making your hand a fist. Wet your fingers or wear gloves when shaping çiğköfte so that it won’t stick.

I had cikofte in Istanbul for the first time and fell in love with that spicy taste. Had always wanted to make it myself. Finally I tried it yesterday and saw how I should be patient when kneading. I added some ground walnuts in it because my friend in Turkey told me to do so. The result came out so good!
