Cilantro Lime Rice with Coriander and Lime Zest, made on the stovetop with brown (or white) basmati rice. Vegan, healthy &amp; Delicious!

Cilantro Lime Rice

olive oil

white onion, diced (1 1/2 cups)

garlic cloves, rough chopped

white basmati rice (see notes for brown basmati rice)

water

salt

ground coriander

limes- zest and juice

cilantro, chopped, leaves

scallions, sliced

Over medium heat, using a lidded saute pan or wide pot, saute onion and garlic in oil until fragrant and tender, 4-5 minutes. Add rice, saute 1-2 more minute, coating each grain, then add coriander, 1 tablespoon of the lime zest (save rest for garnish)  and 1 1/2 teaspoons salt.

Give a stir and add the water. Bring to a rapid boil. Cover, lower heat to low (gently simmering).

Cook 20-22 minutes or until all the water evaporates.

Fluff with fork, squeeze with lime juice (3-5 tablespoons) and right before serving, toss in the chopped cilantro and scallions.

Fluff again, taste and adjust salt and lime to taste.

This has become a staple item/recipe in our household. And it reheats very easily and well on the stove top retaining its great flavor. So I make it in bulk and it lasts through the week for lunches and dinners. A favorite!

If the rice is cold, reheat it. To do so, add it to a microwave-safe bowl and place a water-dampened paper towel on top. Microwave it for 1 minute, and then carefully remove and stir it. Microwave in additional 30-second intervals until warm.

Stir together the warmed rice, minced cilantro, and fresh lime juice. Add the cilantro lime rice to the bottom of a shallow bowl.

Arrange the lettuce, taco meat, tomato, black beans, corn, queso fresco, avocado, scallion, and cilantro on top of the rice.

Drizzle on the Southwestern Salad Dressing or your choice of dressing.

Serve with the lime wedges to squeeze on top.

This rice is best served immediately but can be cooled and stored in the refrigerator for 3-4 days. Reheat any leftovers in the microwave until piping hot.

Great recipe! The flavors also work well with quinoa, which I prefer to rice.

When eating rice I always choose white to avoid digestion and gut issues I get with brown. 

Further, brown rice is full of phytates and lectins, which bind to vitamins and minerals and prevent them from being absorbed. When you consider this added to the fact brown rice is not considerably higher in nutrients (white is higher in several nutrients like niacin) the bottom line is that brown doesn’t really come out ahead nutritionally. Interesting to note Asians use white rice over brown as well. Maybe they know something the Western world doesn’t. :)

Cilantro Lime Rice (Chipotle Copycat)

garlic (minced)

lime (zested and juiced (about 2 tablespoons juice))

Rinse. Rinse the rice in a fine mesh sieve until the water runs clear. Set aside.

Saute and toast. Heat the oil in a large saucepan over medium-high heat. Add the garlic and saute for 30 seconds, until fragrant. Add the rice and salt, and stir the rice for a minute, lightly toasting it.

Simmer. Add the water, bring it to a boil, cover the pot, and reduce the heat to low. Simmer for 10 to 15 minutes, until the water is absorbed and the rice is tender. Remove the pot from heat (keep it covered) and let it steam for an additional 10 minutes.

Add flavor. Add the lime juice, lime zest, and chopped cilantro. Stir everything together and serve immediately!

I was buying a prepackaged cilantro rice, which wasn't very cost-effective and it was wasteful with the packaging.  The brand I was buying was good and vegan-friendly; It became more expensive and harder to find.  Your recipe is such a great replacement !  Thank you so much. Great instructions and the rice came out perfect. I tripled the recipe, including the amount of water and the rice didn’t clump
together. I added 2 TBSP of butter because…why not?

I whipped up some cilantro lime rice, and my hubby and friends loved it! I doubled the recipe and served it with chimichurri chicken. It’s super easy to make and will definitely be a regular in my kitchen.

Great recipe and easy to make! I made this tonight together with the cilantro lime chicken recipe from downshiftology. I've made the chicken many times before but not the rice. I realized how much simpler it is to make both since you're already prepping the lime, cilantro and garlic so just prep a bit extra at the same time. The flavors all together and really good.

This recipe is easy to follow and great to add to your rotation of dinner options. I like to make the rice ahead of time and store it in a freezer bag.  it makes for quick tasty meals that save your budget and it helps me satisfy my burrito bowl cravings.

I have but one recommendation: pretty sure OG Chipotle cilantro lime rice is garnished with bay leaves at the end. That gives it that kick and compliments the cilantro well.
