Cilantro Garlic Sauce

garlic (or more to taste)

extra virgin olive oil

lime (squeezed (2 tablespoons lime juice))

salt ((careful not to over salt!))

Add all ingredients to food processor. Mix until smooth. Serve and enjoy!

Grilled Spicy Lime Shrimp with Creamy Avocado Cilantro Sauce has a simple but full of flavor and spice marinade. The creamy avocado cilantro sauce is the perfect cool and creamy dipping sauce.

Grilled Spicy Lime Shrimp with Creamy Avocado Cilantro Sauce

shrimp

garlic (minced)

chili powder

cumin

paprika

salt

black pepper

red pepper flakes

avocado

greek yogurt

juice of 1 lime

cilantro (chopped)

salt and pepper

In a small bowl whisk together lime juice, olive oil, garlic, chili powder, cumin, paprika, salt, pepper, red pepper flakes. Pour into a resealable bag and add shrimp. Toss to coat and marinate for 30 minutes.

Preheat the grill to medium heat. Put the shrimp on skewers and place on the grill. Grill on each side for about two minutes or until no longer pink.

To make the creamy avocado cilantro sauce add the avocado, greek yogurt, garlic, lime and cilantro. Pulse in a food processor until smooth. Add salt and pepper to taste. Serve immediately with shrimp.

Place the cashews in a bowl and cover them with water. Soak for 1 hour (or the very least, 30 minutes if you have a high speed blender). For preparation in advance, you can soak the cashews overnight, which is even better.

Drain the cashews. Add the cashews, water, lime juice, cilantro, and kosher salt to a blender, then blend on high for 1 minute. Stop and scrape, then add additional liquid if necessary to come to the desired creamy consistency (we added 2 additional tablespoons; you could add more for a more drizzle-able sauce). Blend for several minutes until creamy and smooth. Store in a sealed container in the refrigerator for up to 1 week or in the freezer for several months.

This is one of my favorite versions of a signature dish of the Republic of Georgia.

Georgian Bean Salad With Cilantro Sauce

garlic cloves, green shoots removed, minced

Soak the beans overnight or for six hours in just enough water to cover the beans. Transfer with the soaking water to a soup pot or Dutch oven. Add enough water to cover by 2 inches, and bring to a simmer. Skim off any foam, then add the onion and two of the garlic cloves. Reduce the heat, cover and simmer one hour or until the beans are just about tender. Add salt to taste (about 1 rounded teaspoon) and the remaining garlic, and simmer another 30 minutes or until the beans are tender but intact. Drain, retaining the liquid.

Toss the beans with the cilantro sauce and the scallions. If you wish, moisten with some of the bean liquid. Transfer to a serving dish, and allow to cool to room temperature. Moisten with more liquid if desired, and adjust seasonings before serving. Add chopped tomatoes if desired. Sprinkle with cilantro and serve.

Cilantro lime dressing also makes a good marinade for beef, chicken, pork, and seafood. The first step is to chop the cilantro, both the leaves and the stems.

Get your mini food processor, or your Vitamix pitcher and start to add the ingredients one at a time, first the chopped cilantro.

Then the next thing to do is to squeeze the lime juice, and add it to the pitcher.

Next step is to add the powdered Swerve, and mustard. 

Blend and then add the olive oil and blend again. 

Pour your dressing into a glass jar and put it in the refrigerator to chill for 30-60 minutes. 

It takes just 5 minutes to make this creamy cilantro sauce. Staying true to it’s name, this green sauce has big flavors of cilantro.

📋Creamy Cilantro Sauce

jalapenos

Greek yogurt

cumin powder (optional)

Salt and pepper

vinegar ((optional))

Rinse cilantro with the stem in water to get rid of any dirt.

Add cilantro, garlic cloves, jalapenos, salt, ground pepper, cumin powder, lime juice and Greek yogurt into the blender. (You can add all ingredients at a time too).

Blend until smooth.

Pour in  vinegar (optional) and olive oil in slow streams. Continue to blenduntil it reaches smooth and creamy sauce.

Taste and adjust the season (salt and pepper) to taste.

Transfer cilantro lime sauce into air tight glass jar. You can store it in fridge for up to a week.

Use it on salads, burgers, sandwiches, roasted chicken, grilled meat, for fries for dipping – literally everything.

This Cilantro and Mint Sauce is quick and easy to make in just 5 minutes, and full of bright, zesty, and spicy flavors! It’s wonderfullycreamy, and is delicious as a dip, spread, and dressing!

Cilantro and Mint Sauce (Creamy!)

Coriander (Cilantro) – washed and pat-dried

Mint Leaves – washed and pat-dried

Mayonnaise (full-fat is best)

TBLS Greek Style Yogurt (optional –

½ TSP ground Cumin

½ TSP ground Cayenne (optional), to taste

¼ TSP Kosher Salt,

2-3 TSP freshly squeezed Lime Juice,

Prepare the fresh ingredients

Wash and pat-dry the coriander and mint leaves. Roughly chop the green chilies and garlic cloves if your blender is not very powerful.

Blend

Combine the coriander, mint leaves, green chilies, garlic, mayonnaise, Greek style yogurt (if using) ground cumin, ground cayenne, kosher salt, and lime juice in a high-speed blender or food processor. Cover and blend until smooth. (You may need to uncover and push down the ingredients and stir with a spoon 1-2 times in between if you’re blender is not very powerful.) Taste and stir in more kosher salt or lime juice if needed.

Serve

Use immediately or transfer to a sealed airtight container and store in the fridge until ready to use. Enjoy in kebabs, kathi rolls, salads, sandwiches, burgers, tacos, and use as a dip, spread, or dressing.

Storing

Store in a sealed airtight jar/container in the fridge and consume within 5-7 days.
