In a Dutch oven or large pot over medium-high heat, heat oil until shimmering. Cook onions until softened, about 5 minutes.&nbsp;

Stir in chocolate, garlic, chili powder, oregano, cinnamon, allspice, and cloves until fragrant, about 30 seconds. Add broth, tomato sauce, vinegar, tomato paste, brown sugar, and Worcestershire sauce.

Stir in beef and bring to boil. Reduce heat and simmer until thickened, about 20 to 25 minutes. Season to taste with salt and pepper (I like 1 teaspoon salt and 1/2 teaspoon pepper).

Serve over cooked spaghetti with desired toppings such as cheese, beans, onions, and crackers.

Using sauté function, cook ground beef and onion together for about 8 minutes, or until beef is browned. Alternatively, do not brown beef first for a more authentic, softer texture. Add garlic and sauté for 30 seconds more. Hit CANCEL.

Add the remaining ingredients EXCEPT TOMATO PASTE.  Stir to combine and secure on lid with valve sealed.

Cook on HIGH PRESSURE for 20 minutes then use quick release. After valve goes down, take off lid and stir in tomato paste. Simmer on SAUTE for 5-10 minutes, or until desired thickness. Serve on cooked spaghetti or hot dogs with desired toppings.

INSTANT POT:

In a slow cooker&nbsp;mix together everything except ground beef. Add ground beef to slow cooker, breaking up meat with spoon.

Cook on low for 8 hours or high for 6 hours. Serve on cooked spaghetti or hot dogs with desired toppings.

SLOW COOKER INSTRUCTIONS:

Skyline Cincinnati Chili (Copycat Recipe)

onions

In a large skillet over medium heat, add ground beef and onions. Saute until onions are translucent and beef is no longer pink. Drain.

Reduce the heat to low and pour the beef stock. Simmer for 10 minutes.

Mix in the tomato sauce, chili powder, apple cider vinegar, Worcestershire sauce, unsweetened chocolate or cocoa powder, minced garlic, cinnamon, cumin, salt, red or cayenne pepper, allspice, cloves, and bay leaf or bay leaf powder. Simmer, uncovered, for 1 hour.

Remove the bay leaf (if using) and spoon off the layer of grease on the surface.

Serve over spaghetti noodles or on top of hot dogs. Top with cheese and other optional toppings. Enjoy!

Cincinnati Chili is a classic Midwestern recipe! This chili is nothing like you have ever had before! Slow simmered meat sauce is served over spaghetti noodles. 

water ((OR can do half water, half beef broth))

beef ((80/20))

onion (finely diced)

Tablespoon chili powder

Tablespoon worcestershire sauce

light brown sugar

nutmeg

¼ teaspoon ground all spice

dark chocolate (OR unsweetened cocoa powder)

bayleaf

spaghetti noodles (cooked)

beans

onion (diced)

cheddar cheese (shredded)

oyster crackers

Create Broth

In a large dutch oven combine the water and tomato paste. Whisk together to combine.

Add meat

Crumble the meat with fingers and add to the liquid in the pot.

Add ingredients

Add all remaining ingredients to the pot and stir to combine.

Simmer

Bring pot of chili to a simmer over medium heat. Cover and lower heat. Let simmer for 2-3 hours stirring occasionally. Skim grease from the top as needed.

Cool

Remove the chili from the heat and allow to cool to room temperature. Cover and store the chili in the refrigerator overnight.

Remove Grease

After chili has cooled overnight, using a spoon, breakup the grease on the top of the chili and remove completely.

Reheat

Bring the chili back to a low simmer over medium heat.

Serve

Serve the chili warm over spagehtti noodles or over a hot dog.

I love tis diner style chili mac recipe. So good, and not too spicy!

Not My Mama's Chili Mac or Chili Three, Four or Five Ways

ground turkey or chicken or beef

onion

T ancho chili powder chile powder

T rojo chili powder

½ t smoked paprika

t cocoa

14 oz can diced tomatoes

onion soup mix

ketchup

T yellow mustard

t Frank’s hot sauce

c water or beef bouillon

pintos,

½ c grated cheddar cheese

Canned Parmesan cheese

½ lb cooked spaghetti or elbows

c ketchup (I’m a Heinz girl)

Worcestershire

T brown sugar

Brown turkey over medium heat and crumble it as it cooks.

Add onion and garlic and cook for about 2 minutes. Push to side and add chili powders, oregano, allspice, and paprika. Cook for a minute or so until spices are toasted. You will smell them.

Add can of tomatoes, cocoa, onion soup mix, ketchup, mustard and Frank’s hot sauce. Let simmer a few minutes until liquid has disappeared by about half.

Stir in can of beans. Now stir in water and let simmer about 10 minutes. It should still look like a thick gravy but not be so thick as to not have liquid. If you let it sit a bit too long and it gets too thick just add a little more water. It can take it!

Mix ingredients together and shake or stir until sugar dissolves.

BBQ Sauce

Place a serving of pasta on a plate. Top with several spoonfuls of chili. Spread the chili with 1 T  of BBQ sauce or to taste.

Top with some spoonfuls of diced onion and then the grated cheddar. Feel free to use the Parmesan out of a can. And just for good measure I topped my chili off with a few pepperoncini slices, but you could use jalapenos. If you like saltines-go for it!  Crumble a package of oyster crackers on top or some Saltines straight from the cellophane!
