This east sweet and spicy tea is wonderfully warming, despite being served cold. A great end to a meal or just because.

Sujeonggwa (Korean cinnamon tea)

oz fresh ginger (30 grams, giving around 1/4 cup

cinnamon

water (900 milliliters)

sugar (90 grams, white

persimmon ((if available))

pine nuts (to serve)

Peel the ginger and cut into thin strips. Place the ginger and cinnamon sticks in a pot with the water and bring to a boil.

Once boiling, cover and reduce the heat to a simmer. Continue to simmer for around 40 minutes. The cooking liquid will become a deep red-orange color.

Strain the ginger and cinnamon from the tea and add the sugar. Stir it in so that it fully dissolves. Add the dried persimmon, allow to cool to just slightly warm before refrigerating overnight.

Serve cold, ideally in small bowls, with some of the soaked persimmon in each bowl (either leave one whole or, cut up which is easier to eat). Top with a couple pine nuts.

Easy Cinnamon Tea

Mexican cinnamon (about 3-4 inches)

First, place the 4 cups of water and cinnamon sticks in a medium-sized pot to boil over medium to high heat (4 to 5 minutes).

Reduce the heat to low, let the cinnamon simmer for about 12-15 minutes, and cover with a lid. This step helps to infuse the water with the cinnamon flavor.

Note: The water&#39;s color should have changed to a honey-amber color.

Strain the tea to remove the sticks and any small particles. You can use a fine mesh strainer or cheesecloth for this.

Add 1-2 tablespoons of honey and one tablespoon of lemon to each cup. 

Add one cup of tea to each cup with honey , and stir well to ensure the honey is fully dissolved.
