My kids love this recipe. I cut the recipe at 1/3rd per person and made this for 2 people 2 slices each. For the cinnamon sugar, I mixed 1/2 cup of sugar and 2 teaspoons of cinnamon and had leftover.

Rice Krispies cereal

Line a 9&#215;9 pan with parchment paper and coat lightly with nonstick spray. Set aside.

Melt the butter in a large saucepan over low heat. Add in 6 cups of the marshmallows, salt, and vanilla and stir constantly until melted. Remove the pan from the heat.

Stir in the Cinnamon Toast Crunch, Rice Krispies, and remaining marshmallows until coated in the marshmallow mixture.

Press evenly into the pan and allow to cool completely before cutting into bars.

Cinnamon Toast Crunch Cookies are buttery, soft and loaded with your favorite cinnamon sugar cereal crushed right into the dough!

Cinnamon Toast Crunch Cookies

Cinnamon Toast Crunch cereal, divided

butter, room temperature

sugar

baking powder

cinnamon

all purpose flour

Preheat oven to 350°F. Line a baking sheet with parchment, set aside.

Place 3 cups of Cinnamon Toast Crunch cereal in a large zip-top bag and seal. Reserve the remaining 1 cup of cereal. Using a rolling pin, crush the cereal until it is a fine crumb. Alternately you can do this step in a food processor or blender. Set aside.

In the bowl of your stand mixer fitted with the paddle attachment, mix the butter and sugar together for 2 minutes. Add in the eggs, vanilla, baking powder, salt and cinnamon, and continuing mixing until combined and smooth, scraping sides of the bowl as necessary.

Turn the mixer to low and add in the flour until just combined. Mix in the crushed cereal until evenly incorporated. Stir in the reserved cup of uncrushed cereal.

Using a medium (2- tablespoon) cookie scoop, portion out the dough and place 2- inches apart on the prepared baking sheet. Bake for 9 &#8211; 10 minutes until edges begin to golden.

Transfer to a wire rack to cool completely.

If desired melt white chocolate in a microwave-safe bowl in 20 second increments, stirring after each, until melted. Drizzle on top of the cookies.

So good but I would add a little more sugar

The recipe is so good but I would add a little more sugar

I made a few changes to the recipe, and it turned out great; I:
- crushed the cereal using a food processor, so it became pretty crumb-y
- mixed the white chips into the dough itself
- refrigerated the dough overnight (which made the bake time more like 9-10 minutes but I'm a big believer in chilling dough to get puffier cookies, especially since there's no brown sugar in this recipe)
- rolled them in cinnamon sugar before baking

I'm sure they work well as written too, but I'm really happy with how these turned out!

I really liked this recipe. Great way to use extra cereal.

My family liked these cookies, but we thought the added whole cereal pieces were too chewy.  Next time I will grind all 4 cups of cereal and add in white chocolate chips. I think that will be a great addition!

{Nostalgic} Cinnamon Toast Crunch Cookies with Hidden Marshmallow Filling

(180 grams) All-purpose Flour

tsp Baking soda

Cinnamon

(160 grams) Light brown sugar (packed)

(50 grams) Granulated sugar

(115 grams) Unsalted Butter

Egg (large, room temperature)

tsp Vanilla extract

Marshmallows (large) (torn in half)

(125 grams) Cinnamon Toast Crunch (cereal)

Preheat your oven to 350F (325F for convection bake). Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

In a small bowl, add flour, baking soda, cinnamon, and salt. Whisk mixture to aerate and sift. Set aside.

In a large bowl, use an electric mixer to beat sugars (brown and granulated) with butter.

Add egg and vanilla extract. Mix until combined and scrape sides of bowl until all ingredients are well incorporated.

Slowly add dry (flour) mixture to the wet (butter/sugar/egg) mixture, beating on low speed until just combined.

Cinnamon Cookie Dough

Using a large cookie scoop, or by making 2 tbsp cookie dough portions, place dough rounds  onto your baking sheet.

Tear large marshmallows in half. Add half of each marshmallow to the top of each cookie.

Press marshmallow into centre of each dough ball and form into a ball around the marshmallow – allowing only a small hole of marshmallow to be visible!

Add Cinnamon Toast Crunch cereal to a sealable, durable bag (like a large freezer bag). Seal bag and use a rolling pin/heavy rod to coarsely crush cereal.

Place crushed cereal into a bowl and roll each dough balls into the crushed cereal (use your hands to press additional cereal into outer surface of cookie balls, as needed, to ensure it is well coated.

Refrigerate dough balls for 1h.

Cinnamon Toast Crunch Coating

Place cookie dough balls onto baking sheet, spaced 2-3&quot; apart. Bake cookies at 350F for ~15 min or until the edges are golden brown and cookie has spread. Cookies will continue to crack as they cool.

Let cookies cool on baking sheet and enjoy!!

Vegan Cinnamon Toast Crunch Recipe - Vegan Friendly and Dairy-Free, yet super crunchy and delicious cereal for the perfect vegan breakfast!

Vegan Cinnamon Toast Crunch Cereal

whole wheat flour (270 g)

brown sugar (70 g)

tbsp ground flaxseeds (mixed with water)

coconut oil (60 g) (melted)

plant milk (60 ml)

tsp vanilla extract

tsp baking powder

You will need 2 bowls for this recipe: In the first one combine all dry ingredients, in the second all the wet ingredients. By blending them separately first you can ensure that all ingredients are evenly spread throughout the dough.

Combine the wet ingredients with the dry and form a ball out of the dough. Wrap it in plastic wrap and place it in the fridge for 1 hour to firm up.

When the time has elapsed, preheat your oven to 170ºC. Remove the dough from the fridge and cut in half. Place one half in between a lightly flour-dusted baking sheet and the plastic wrap, then roll out as thin as you can. The wrap will prevent the dough from sticking to your rolling pin.

Once done use a pizza cutter to cut vertical and horizontal lines across the dough to create the crunchy cinnamon squares. Coat with a mix of Splenda Granulated and Cinnamon and then off into the oven!

Repeat with the second half of the dough and bake both for about 30 minutes. Keep checking back on it to make sure that the dough evenly crisps. If your oven is hotter on one corner than on the other (my old oven used to be like that!) then make sure to flip the baking tray around after half of the baking time.

Remove from the oven when finished and let it cool down completely before you break the cereal into the pre-cut squares. Keep the cold cereal in a large air tight container - I used a huge mason jar.
