Beet Salad with Feta Cheese and Citrus Balsamic Vinaigrette Recipe

beets

tbsp. finely chopped cilantro

olive oil

balsamic vinegar

honey

dijon mustard

Cut the tops off the beets. Place the beets in a large pot and cover with 2" of water. Bring to a boil then reduce to low and cook for 45 minutes.

Set the beets aside and allow to cool.

Peel the beets once they are cool to the touch.

Cut the beets into 1" pieces.

In a small mixing bowl add the orange juice, lime juice, balsamic, vinager, honey, and dijon mustard.

Whisk the ingredients briskly while slowly pouring in the olive oil.

Whisk vigorously until the ingredients have combined.

Add the chopped garlic and salt. Whisk in incorporate.

Set Aside.

Vinaigrette

Divide the beets in 4 small salad bowls.

Top with crumbled feta cheese and chopped cilantro.

Lightly dress with vinaigrette.

Serve at room temperature or lightly chilled.

Prepare Dressing

In a small mixing bowl or glass jar, whisk together the orange juice concentrate, honey, vinegar, salt, and pepper. Add in the olive oil and whisk to incorporate.

Drain the canned mandarin oranges well, patting dry with a paper towel if needed.

Assemble Salad

In a large serving bowl, toss together the lettuce with 2 tablespoons of the prepared dressing. Add in the mandarin oranges, almonds, and cranberries, and serve with additional dressing on the side.

Make the dressing: In a small bowl, whisk together all dressing ingredients. Set aside.

Finely dice bell pepper, red onion, and tomatoes. Roughly chop cilantro, large stems removed. Place in a large bowl.

Add black beans (rinsed and drained) and sweet corn (thawed if frozen) to bowl.

Pour dressing over top and toss to combine.

Best if chilled 1 hour (or longer) before serving.

Stir well before serving, as some dressing will settle at the bottom. Top with diced avocado right before serving if desired.

Hi, I love this recipe. It was a little dry for me, so I added some lime and aged balsamic.

This salad blends the best of summer ingredients for a fresh salad and puts to excellent use grapefruit and oranges.

I'm a big fan of fruity salads. Spinach salad with orange and grapefruit looks very inviting with the citrusy dressing. Perfect as a light meal or as an accompaniment to the main dish. Peeling off the membrane from citrus fruits takes time but its totally worth the effort.
