Clementine Jam has a unique, brilliantly fresh flavor that plays well with all kinds of toast, croissants, scones, and biscuits.  It&#x27;s not a marmalade because there&#x27;s no bitter peel involved, it&#x27;s a thick no-pectin jam bursting with sunny citrus that takes just 30 minutes on the stove.

Peel the clementines and cut each one in half through the middle to check for seeds.

Put the fruit, in batches if necessary, in the bowl of a food processor and process until smooth.

Pour the puree into a heavy pot and add the sugar and lemon juice.  Bring the mixture to a boil, then turn down the heat a bit and boil for about 30-40 minutes, stirring fairly often.  Do not cover the pot!

The liquid will foam up at first, but will eventually get absorbed.  The mixture will start to thicken and get a little deeper and glossier when it is ready.  I like to freeze a small plate and test the jam by dropping some onto it and letting it cool.  If the jam firms up, it's done.  If not, keep boiling a little longer.

When it is done, ladle it into clean jars and let cool on the counter.  When it reaches room temperature, cover and refrigerate.  It will keep at least 10 days in the fridge.

"Posset" goes all the way back to medieval England, when it was a drink made with sweetened, spiced hot milk. It has since evolved into a flavored pudding. To ensure that the pudding thickens, follow the instructions for heating the cream precisely.

Bon Appétit

Bring cream and sugar to boil in large saucepan over medium heat, whisking until sugar dissolves. Increase heat and boil 3 minutes, stirring constantly and adjusting temperature to avoid boiling over. Remove from heat; stir in juice and peel. Let stand 10 minutes. Stir again to blend (mixture may begin to thicken). Divide mixture among six 3/4-cup custard cups (cups will be only 2/3 full). Chill overnight to set. Garnish with fresh clementine segments.

Put some Martini glasses (or champagne flutes) into the freezer. Mix the clementine juice, vodka and Cointreau in a jug, then chill for 1 hr (or up to 1 day). Thinly slice the 2 clementines to use as a garnish.

To serve, put a clementine slice into each frosty glass. Fill almost halfway with the chilled jug mixture, then open the bottle of fizz and top up the glasses.

The Ricotta Clementine Dip is ready in a few minutes and uses fresh seasonal ingredients easily found at the supermarket. The clementine&nbsp;juice can be made at home or purchased if desired. The dip&nbsp;is sweetened with honey and is perfect to serve with gingerbread or ginger cookies.&nbsp;

In a bowl add the ricotta and the cream.&nbsp; Use a whisk and mix.&nbsp;

Add the rest of the ingredients and whisk again.&nbsp;

I’m going to show you an easy way to to make ordinary, nice carrots even more delicious – I’m talking outrageously tasty. You’ll love these as part of your festive spread.

The sweetness of the carrots works so well with the gentle citrus flavour of clementines – you’ve got to try it. I’ve chosen rosemary this time round, but any woody herb will do.

This is my favourite way to cook my Christmas veg. Keeping the skins on gives incredible flavour, and tailoring flavourings to the veg means you’ve got a proper streamlined taste profile. They’re just really good veg!

Clementine Cake

eggs (room temperature)

(198 g) granulated white sugar

(1 1/2 sticks butter) room temperature and cut into 12 pieces

Place whole unpeeled clementines in a large pot, cover with cold water and bring to a boil over high heat. Reduce heat to low, cover and simmer gently for 2 hours, adding more water as needed. Remove clementines with a slotted spoon and, once cool enough to handle, halve and remove any seeds or other hard bits. Purée in a food processor or blender and set aside. (May be done up to 2 days ahead and refrigerated.)

Heat oven to 350 degrees. Spray a 9-inch springform pan with cooking oil, line bottom with parchment paper and spray paper with oil.

In a large bowl, whisk the eggs together with the sugar, salt and clementine purée. Add the almond flour and baking powder and stir until just combined.

Pour into prepared pan and bake until edges are golden brown and starting to pull away from sides of pan, about 1 hour. Transfer to wire rack set over baking sheet. After 10 minutes, run a knife around edge of pan to loosen cake; remove cake from pan. Peel off parchment paper and return cake to wire rack to cool completely. Decorate with dusting of powdered sugar or with chocolate glaze or candied clementines.

Heat a pan of water until simmering. Place all ingredients, plus 5 teaspoons water, in a slightly smaller metal or glass mixing bowl and set over the pan. Stir gently with a spatula until nearly all the chocolate has melted, then remove bowl from heat and set aside to finish melting, stirring occasionally until perfectly smooth, about 5 to 10 minutes. The glaze is ready to pour when it is between 88 and 90 degrees.

Pour glaze onto center of the cake’s top and let it run down the sides. Gently tap the cooling rack up and down so the glaze coats the entire cake. Let set for at least an hour before serving.

This clementine sorbet is a light and fresh dessert – often needed (though not always received) for Christmas. Liquid glucose is found in most supermarkets – it stops sugar crystals from forming, so prolongs the life of the sorbet.

150 grams/5½oz caster sugar

milliliters/2fl oz liquid glucose

250 milliliters/9fl oz clementine or blood orange juice

tbsp Campari (optional)

Perfect with a glass of madeira or sherry, madeira cake is so good to have around at Christmas. As it’s denser than the average sponge, it is also perfect for trifle.
