These baby back pork ribs are cooked in the slow cooker for several hours to create ultra tender meat that just falls off the bone!

Coca Cola (Slow Cooker) Ribs

barbecue sauce

Coca Cola (regular or Diet Coke is fine)

brown sugar (packed)

garlic

Worcestershire sauce

cayenne pepper (can add more 1-3 tsp depending on your heat preference)

salt and pepper (for seasoning)

Spray the inside of a slow cooker with nonstick cooking spray. 

Remove the membrane (inner skin) from the ribs. Discard the membrane and place the ribs in the slow cooker. If the ribs are too big, cut in half so that the ribs can fit. Season the ribs with some salt and pepper. 

In a medium sized bowl mix the barbecue sauce, Coca cola, brown sugar, garlic, Worcestershire sauce and cayenne pepper. 

Pour HALF of the sauce over the ribs, cover and cook on low for 7-9 hours or on high for 4-5 hours. See NOTES.

Cover the remaining sauce and place in the refrigerator. We will use it again before broiling the ribs. 

Once the ribs are falling apart and very tender, preheat the oven to broil (or around 450°F) Carefully transfer the ribs to a foil lined baking sheet. 

Use a basting brush to baste the ribs. Bake the ribs for 5 minutes or until crisp on the edges and the sauce is caramelizing. Watch the ribs closely, you never want to leave anything under the broiler unattended.

Remove from the oven and serve immediately with the remaining sauce. 

Who wouldn’t want Coca-Cola Marinated Ribs smothered in a homemade BBQ sauce served up with some spinach dip and my all time favorite salty cracker? Hello?!?! Let’s do this.

Coca-Cola Marinated Ribs with Homemade BBQ Sauce

Coca-Cola

chili powder

water

olive oil

onion (minced)

garlic (minced)

ketchup

brown sugar

cider vinegar

cayenne pepper

Place the ribs in a large baking dish and cover with almost all of the Coca-Cola (leaving about 1/2 cup of Coca-Cola for the BBQ sauce) and add the salt. Marinate the ribs for 24 hours in the fridge.

Heat the oven to 350°F.

Remove the ribs from the liquid, place on a large baking sheet and pat them dry. Sprinkle them with the chili powder. Pour 1 cup of water into the baking sheet, and cover tightly with foil. Bake for 2 hours, until the meat nearly falls off the bone.

While the ribs are in the oven, prepare the BBQ sauce. Heat the oil in a small pot over medium heat. Sauté the onion until soft, about 5 minutes and add the garlic, stir to combine. Add the ketchup, brown sugar, Worcestershire, apple cider vinegar, cayenne, and remaining 1/2 cup of Coca-Cola. Simmer for 15 to 20 minutes, or until the sauce thickens. Remove from the heat, adjust salt if needed and let cool. Once cooled, transfer to a high-powered blender and blend for 60 seconds until smooth.

Once the ribs are cooked, remove from the oven and heat an indoor or outdoor grill to medium high heat. Liberally brush the ribs with BBQ sauce. When the grill is hot, cook them for 7-8 minutes on each side until slightly charred. Remove from grill and add more sauce if desired. Serve immediately with extra sauce on the side.
