This slightly sticky basmati coconut rice is an excellent side dish to any meal! Savory, easy to make and packed with flavor from lime zest, coconut milk and green onion, it’s a family favorite. Dairy free, gluten free and vegan.

Basmati Coconut Rice

(14 ounce) can light coconut milk, well shaken

water

white basmati rice

fine sea salt

lime zest

green onion

cilantro leaves

Measure out 1 ½ cups of the canned...

Measure out 1 ½ cups of the canned coconut milk and add to a medium saucepan (reserving the remaining coconut milk for later).

To the saucepan, add the water, rice and salt. Mix to combine. Bring the mixture to a boil, then cover, turn down the heat and simmer for about 15 to 20 minutes, until the liquid is absorbed and the rice is tender.*

Turn off the heat, then let stand covered...

Turn off the heat, then let stand covered for 5 to 10 minutes untouched.

Fluff the rice with a fork, then gently...

Fluff the rice with a fork, then gently stir in the lime zest, green onion, cilantro and remaining coconut milk. Let the rice stand uncovered for another 5 minutes, then serve!

Easy Instant Pot Coconut Rice Recipe: al dente Jasmine rice bursting with sweet fragrance &amp; creamy coconut flavors. Perfect pressure cooker side dish to spicy or bold Asian dishes.

Instant Pot Coconut Rice

(230 grams) Jasmine rice

(125 milliliters) 100% pure unsweetened coconut milk or Thai unsweetened coconut milk

¾ cup (188 milliliters) unsalted chicken stock

fine sea salt/table salt

Rinse Rice: Rinse rice under cold tap water until clear. Drain well.

Make Coconut Milk Mixture: In a 2 cups (500ml) glass measuring cup, mix ¼ - ½ tsp fine sea salt, ½ cup (125ml) unsweetened coconut milk, and ¾ cup (188ml) unsalted chicken stock together. Mix well.

Pressure Cook Coconut Rice: Place 1 cup (230g) of Jasmine rice into the pressure cooker. Pour in all the coconut milk mixture and give it a quick stir to ensure all the rice is covered in liquid. Close lid and pressure cook at High Pressure using Manual/Pressure Cook button for 5 minutes + 10 minutes Natural Release. The floating valve may drop at around 6 - 7 minutes, but don't open the lid until the full 10 minutes. Open the lid carefully.

Serve: Fluff the Instant Pot Coconut Rice and serve with your favorite main dish.

Needing to use up some coconut milk and ended up making coconut rice and yellow rice. I used the stackable steamer and cooked both at the same time, one in each steamer.  They will go well with the pork ribs and shrimp from my mom. But they are also delicious on their own.

This is a delicious recipe that we use with so many things!  Make extra, freeze and use for all kinds of "bowls" ~ it will add a new dimension to your meal. :)

Delicious! So much so that just cooking 1 cup of rice is not enough, plus sometimes I just want to use up a whole can of coconut milk at once.  So I triple the recipe: 
3 cups Jasmine Rice
1 (13.5oz/398ml) can coconut milk
550 ml water
2 tsp organic chicken better than bouillon (already salted so no need to add salt or just use unsalted chicken broth if that's what you have and add salt 3/4-1 1/2 tsp salt).

This rice was excellent: so fragrant, and with that wonderful coconut taste. I soaked and rinsed my rice thoroughly before starting, but still, it was a bit too chewy for our tastes. I took the suggested advice and added a bit more stock, and I also added some ghee, and this made a nice, soft, fragrant rice. We enjoyed it with a Jamaican Brown Stew Chicken. Delightful! I will be putting this rice into regular rotation in our household, as my whole family loves the notes of coconut to elevate a regular rice dish.

Wasn't feeling well and picked up a quick meal of prepackaged Asian braised beef tips. Wanted to add a little something to go with it. Found this recipe for ip coconut rice. Wow! Not only was this simple and easy to put together with a headache and vertigo but, this was super tasty too. Thank you so much. I will definitely be making this more. I doubled the recipe and used 1/2 tsp of salt total. Perfect accompanying side or alone.

So easy and delicious! A hit with the kids as well. I topped it with Island Chicken (cinnamon, chili, cumin rub and sauce- soy sauce, sriracha, and brown sugar). Keeping this one!

Made this tonight for supper. So super easy and soooooooo delicious. Husband usually doesn't eat rice but he had a big serving of it with the sauce from the Huli Huli chicken (also made in the IP)
 and had coconut cream pudding for dessert. Made for a nice light supper on a hot summer's night.
