Coconut Cauliflower Curry  A rich coconut curry broth with onion, garlic, cauliflower, ginger, Indian spices in coconut milk. Flavorful vegan meal and you won’t even miss the meat! 

Coconut Cauliflower Curry

Tablespoon Coconut Oil ((or canola or olive oil))

Onion ((finely diced))

Garlic Cloves ((finely minced))

knob Fresh Ginger ((peeled, grated and minced))

Cauliflower

Salt

Pepper

Tablespoons Curry Powder

Turmeric Powder

(1) 14.5 ounce can Full-Fat Coconut Milk ((canned))

(1) 14.5 ounce can Crushed Tomatoes

Limes ((juiced))

Cilantro ((chopped))

Basmati Rice or Naan Bread

Heat a large skillet or pot over medium-high heat. Add oil and let sizzle. Add onions and let cook for about 8-10 minutes, stirring often. Stir in cauliflower, garlic and ginger and cook for 1 minute longer. Stir in salt, pepper, curry powder, and turmeric.

Add coconut milk and crushed tomatoes. Turn down heat to medium-low and let simmer for 20-25 minutes.

Remove from heat and sprinkle with lime juice. Serve with basmati rice or naan bread and sprinkle with fresh cilantro.

Coconut-Cauliflower Curry Bowls

vegetable oil

shallots,

tbsp. finely chopped peeled fresh ginger

curry powder

butternut

coconut milk, shaken

c. cauliflower florets (about 12 oz.)

c. Cooked white rice

Cilantro leaves,

In 6- to 7-quart saucepot, heat oil on medium. Add shallots, ginger and curry powder; cook 5 minutes, stirring. 

Add squash, coconut milk, tomatoes and 1 teaspoon salt. Cover and simmer 15 minutes. Uncover; stir in cauliflower. Cook another 15 minutes or until squash and cauliflower are tender, stirring occasionally.
