How to Make Coconut Milk

(~160 g) shredded unsweetened coconut

Add coconut, 3 cups (720 ml) water, salt, and any additional add-ins (optional) to a high-speed blender. Top with lid and cover with a towel to ensure it doesn't splash. Blend for about 2 minutes or until the mixture seems well combined.

Scoop out a small sample with a spoon to test flavor/sweetness. Add more dates, salt, or vanilla as needed. Add remaining 1 cup (240 ml) water if too thick.

Pour the mixture over a large mixing bowl or pitcher covered with a nut milk bag, a very thin towel, or a clean T-shirt. In my experience, it benefits from a single strain either through a very thin towel or nut milk bag. You can save pulp for baked goods or to add to oatmeal, smoothies, or energy bites.

Transfer to a sealed container and refrigerate. Will keep in the refrigerator up to 5 days (sometimes more). Enjoy cold or hot and shake before use, as it can separate in the refrigerator (due to no preservatives!). Can be used in smoothies, with granola, for golden milk, for matcha lattes, or for baked goods.

You can make your own full-fat coconut milk at home by purchasing fresh, young coconuts. This also ensures your coconut milk is free from any artificial ingredients or preservatives.

With a sturdy cleaver, crack open the coconut. Bang the cleaver on the top of the coconut until you hear a crack. Be very careful by removing your other hand when using cleaver. Do NOT hold the coconut when using the cleaver unless you&#8217;re an expert.

Rinse the coconut meat well, and chop it into small pieces. Then add your coconut meat to a blender or food processor along with about two cups of water.

Blend it into a thick liquid, and then strain it using a metal strainer or cheesecloth so you can separate the coconut pulp/meat from the coconut milk.

Squeeze the coconut pulp well with your hands to get the most coconut milk to strain out.

Break the coconuts

Using a hammer or heavy meat tenderizer, hit heavily through the imaginary line in the middle of the coconut. Crack open the coconut and drain the liquid out of the coconut.

Cut the meat

With a sharp knife, cut through the coconut meat diagonally and vertically to help with removing the meat from the coconut shelves.

Peel out the meat

Remove the coconut meat. With the help of a knife, try to release the coconut meat first from the side of the cups, pulling outwards.

Clean the meat

Using a sharp knife or vegetable peeler, clean the brown layer of the coconut meat thoroughly. Wash the coconut if needed, leaving you with beautiful white-only coconut pieces.

Grate the coconut

With a hand grater, grate the coconut into shreds. You will get the perfect shreds for milk using the smaller holes.

Make homemade milk

Add 2 cups of shredded coconut and 1 litre (4 cups) of room temperature water into a stand mixer or blender and blend.

Strain the milk

Pour the coconut milk and strain it through a muslin cloth, milk bag, or cheesecloth, squeezing as much of the milk as possible.
