Chewy Chocolate Chunk Coconut Oatmeal Cookies {Made With Coconut Oil}

all-purpose flour

quick oats or regular rolled oats

baking soda

salt

coconut oil

dark brown sugar (light also works)

(3.5 ounces) 70% dark chocolate bar, coarsely chopped

Chewy Chocolate Chunk Coconut Oatmeal Cookies {made with coconut oil}

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

In large bowl whisk together flour, oats, baking soda, and salt; set aside.

In a large bowl, mix together melted coconut oil and brown sugar until smooth. Add in egg, egg yolk, and vanilla; mix again until smooth and well combined.

Add in flour and oat mixture to the wet ingredients; mixing until well combined. Fold in shredded coconut and chocolate chunks. Let dough sit for 5 minutes before baking.

Drop dough with cookie scoop or by large rounded tablespoons onto prepared cookie sheet. Bake 9-12 minutes or until edges just begin to turn a golden brown. Do not over bake; we don&#039;t want crispy cookies! Remove from oven and let cool for 5 minutes on baking sheet, then transfer to wire rack to finish cooling. Sprinkle with sea salt if desired. Makes about 20 cookies.

White Chocolate Coconut Blueberry Oatmeal Cookies {made with coconut oil}

Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.

In bowl of an electric mixer beat together melted coconut oil and brown sugar until smooth. Add in egg, vanilla and almond extract; beat again on medium speed until smooth and creamy.

In large bowl whisk together flour, oats, baking soda, and salt. Add dry ingredients to the wet ingredients; mixing again on medium speed until well combined. Slowly fold in shredded coconut and white chocolate chunks/chips. 

Use a medium cookie scoop to gather a heaping rounded tablespoon of dough. Flatten the dough in the palm of your hand and add two or three frozen blueberries on top, roll dough back into a ball and place on cookie sheet. Repeat with each dough ball.

Bake for 10-13 minutes or until cookie edges just begin to turn golden brown.

Remove from oven and cool for a few minutes on baking sheet until the cookies firm up a bit, about 5 minutes. Transfer to a wire rack to allow cookies to cool completely. Makes about 16-18 cookies

1/2 cup coconut oil
1 cup quick oats
1 cup whole wheat flour
3/4 cup shredded coconut
2 tablespoon maple syrup
1 teaspoon baking soda
1/4 cup boiling water

Preheat your oven to 350 degrees and line a baking sheet with parchment paper or a silicone baking mat.
Mix together the coconut sugar and coconut oil until combined.
Add in the oats, flour, shredded coconut and maple syrup and stir until combined.
In a small bowl, dissolve the baking soda in the boiling water and then pour it over the cookie dough. Stir until a wet dough forms.
Roll dough into balls about an inch wide and bake for 10-15 minutes or until starting to turn golden brown.
Cool and enjoy!

Coconut Oatmeal Cookies are soft &amp; chewy oatmeal cookies with lovely coconut flavor! Classic ingredients make up this delightful twist on this oatmeal cookie recipe.

COCONUT OATMEAL COOKIES

butter (softened)

butter flavored shortening

brown sugar (packed)

white sugar

eggs

tsp vanilla extract

tsp coconut extract (or emulsion)

3.4 oz instant coconut cream pudding mix

tsp baking soda

Prep: Preheat oven to 350 degrees. Next, line baking sheets with parchment paper. Set aside.

Dough: In a large bowl, cream together the softened butter, shortening, both white and brown sugars, eggs, and vanilla and coconut extracts, until all is well combined and smooth. Stir in the pudding mix until combined.

In a separate small bowl, whisk together the flour, baking soda, and salt. Stir the flour mixture into the creamed butter mixture until just incorporated.

Lastly, fold in the oats and coconut flakes until well mixed.

Bake: Drop the dough by the rounded teaspoonfuls onto the cookie sheets. Then, bake in the oven for 9-11 minutes or until the cookies are light and golden in color.

Let the cookies cool for a few minutes, serve slightly warm and enjoy!

I made these cookies to bring on a family vacation.  Everyone loves them!!! Will definitely make again!

Position racks in the upper and lower thirds of the oven and preheat to 375°F.

In a medium bowl, stir together the oats, flour, coconut, cinnamon, salt, and baking soda.

To a large bowl, add the butter, brown sugar, and sugar. Using a hand mixer, beat on medium-high until smooth and fluffy, about 3 minutes. Beat in the vanilla and eggs until incorporated. Add the reserved flour mixture and mix until just combined.

To the medium bowl, add the confectioners sugar. Roll the dough into 1½-ounce balls about 1½ inches thick. Toss the balls in the confectioners sugar until completely coated, then transfer to two parchment-lined baking sheets, spacing 2–3 inches apart.

Bake, rotating halfway through, until golden brown and crackled, 10–12 minutes. Set aside on the baking sheets to cool completely.
