These almond coconut energy bars are packed with flavour and nutrition for a healthy snack option that tastes like dessert!

Almond Coconut Protein Bars

almonds (150 g)

hemp seeds (150 g)

unsweetened shredded coconut (100 g)

vanilla pea protein (75 g)

coconut oil (70 g)

water

cinnamon,

salt,

Place the almonds in a food processor or high-powered blender and mix until broken down into a grainy flour. It&#8217;s ok if there are some large chunks.

Add the dates, coconut and hemp seeds and mix until it forms a crumbly mixture.

Add the rest of the ingredients and process into a thick dough (see notes).

Line a 7-8 inch square baking pan with parchment paper then firmly press the dough into the pan using your hands. Spend some time thoroughly pressing it in to the pan to ensure a bar that holds together well.

Place in the fridge for at least 1 hour then lift out of the pan and cut into 12 bars.

I'm all about hemp seeds lately and I'm always looking for a good pre-workout snack! These look perfect!!

No Bake Coconut Protein Bars

almond butter

protein powder

maple syrup

Let’s Do Organic coconut flour

Let’s Do Organic shredded coconut

tsp vanilla extract

tsp salt

chocolate chips

coconut oil

tbsp shredded coconut

Combine almond butter, protein powder, maple syrup, coconut flour, shredded coconut, vanilla extract, and salt in a bowl. Mix together until dough forms. (If your dough isn&#8217;t sticky enough, add an extra 2 tbsp maple syrup. The amount needed may vary depending on the brand of almond butter and protein powder.)

Line a square baking dish with parchment paper. Firmly press the dough across the bottom of the dish.

Combine chocolate chips and coconut oil in a bowl. Microwave in 30 second intervals, stirring between, until the chocolate is melted. Pour melted chocolate over the dough and spread in an even layer. Sprinkle shredded coconut on top.

Chill in the freezer for 5 minutes or until the chocolate sets. Gently slice into 8-12 bars, depending on your preferred size. Enjoy!
