Succulent boneless cod bites in  panko and deep fried or baked in the oven.

Cod Cheeks in Panko Breadcrumbs

kg cod cheeks

eggs

panko breadcrumbs

flour

lemon

tbsp parsley

salt

tsp pepper

Separate

Beat the eggs then put the flour, eggs and panko in separate bowls.

Dip each piece of cod first in the flour, shake off the excess then repeat with the egg, then finally the panko.

Heat

To cook these in a deep fryer, heat the oil to 160 C or 310 F.

Deep fry

Fry in batches, so as not to overcrowd the basket. I find that 6 is about right but it will vary depending on the size of your fryer.

Cook

Cook for about 2- 4 minutes until golden then lift out and drain on kitchen paper.

Oven

Put them in the oven at 180 C or 350 F to keep warm while you cook the rest.

Bake

Alternatively, cook the fish in the oven. Line the oven tray with baking parchment or silicone. Bake at 200 C / 400 F / 180 FAN / Gas 6, for about 20 minutes, turning halfway through cooking.

Garnish

Serve with lemon wedges and some chopped parsley sprinkled over the top.

Cod Cheeks and Chorizo

450 g cod cheeks

butter

tbsp oil

tbsp flour

tsp black pepper

broccoli (tenderstem)

chorizo

Prepare

Dry off the cod cheeks with paper towel and divide into even sized pieces.

Dredge

Mix the flour with the pepper, dredge the cod in the flour and set aside on a tray.

Slice

Cut the ends from the chorizo and slice into rough 1cm or half an inch pieces.

Heat the frying pan over a medium heat and add the sausage in a single layer.

Cook for 2 minutes until golden and crispy then flip them over for a further 2 minutes.

Remove

Set the chorizo aside with a slotted spoon or spatula. Wipe the pan with kitchen paper to reuse for the fish.

Heat the oil in the pan over a medium heat and add the cod cheeks. Carefully turn over for a further 2 minutes.

Simmer

Add the broccoli to a saucepan of simmering water, replace the lid and simmer for 3 or 4 minutes then drain.

Add the chorizo back to the pan to heat through, squeeze the lemon and add the juice over the fish.

Serve

Arrange the broccoli over the dish and sprinkle over the parsley before serving.
