My Asparagus Salad recipe features tender asparagus, salty feta cheese, and sharp red onion tossed in a bright lemon vinaigrette.  Serve my cold asparagus salad as a simple and healthy side dish for a weekday or even holiday meal.

Cold Asparagus Salad Recipe

asparagus

feta

red onion (diced)

parsley (chopped)

lemon (juiced)

olive oil

mustard

honey

garlic powder

salt & pepper

First you will need to blanch the asparagus.  To do that, bring a pot of water to boil. Prepare a second bowl with ice water.

While you are waiting on the boil, snap the woody ends off the bottom of the asparagus.

Submerge the asparagus in the boiling water.  Allow to boil for just one minute (a bit longer if your asparagus is super thick) and then pull it out of the water.  Submerge the asparagus in the ice water to stop it from cooking any further.

Cut the blanched asparagus into two-inch long pieces.

Make the dressing by whisking the lemon juice, olive oil, mustard, honey, garlic powder, salt and pepper in a bowl.

Toss the asparagus, red onion, parsley and feta in the bowl.

Serve cold and garnish with extra feta, lemon slices, and parsley.

A delicious Asparagus Salad Recipe drizzled with homemade lemon vinaigrette and flavored with feta cheese, tomatoes, and olives. It is light and crunchy to serve as a green side dish, light lunch or a healthy meal prep dish. Ready in 15 minutes so you have no excuse to make it.

Asparagus Salad Recipe

asparagus spears

cherry tomatoes (sliced)

radishes (thinly sliced)

scallions (stalks - chopped)

kalamata olives

feta cheese (optional)

basil leaves (loosely packed and torn (optional))

Preheat the oven to 425 degrees F. Place asparagus on a sheet pan in one layer. Drizzle with oil and sprinkle with salt and pepper. Give the asparagus a mix making sure that all the spears are coated with the oil and seasoning.

Roast for 12 minutes or until the asparagus is cooked. Transfer onto a plate and let it cool. When cooled, cut the asparagus into 2-inch pieces. Place into a salad bowl.

While the asparagus is roasting make the lemon vinaigrette by mixing all of the ingredients in a mason jar.

To assemble the asparagus salad: Place tomatoes, radishes, scallions, olive into the bowl with the asparagus. Drizzle with the dressing.

Stir in the feta cheese and basil leaves. Give it a gentle toss.

Serve.

* 1 lb asparagus spears or 1 bunch
* 1 ½ tablespoon olive oil
* 1 clove of garlic minced or grated
* 1 teaspoon kosher salt
* ½ teaspoon black pepper
Optional Seasoning:
* 2 tablespoons grated parmesan cheese
* 1 tablespoon lemon juice

Ingredients for Asparagus Salad:

For the lemon vinaigrette:
* ¼ cup olive oil
* 3 tablespoons lemon juice
* 1 clove garlic minced
* 1/2 teaspoon dijon mustard
* 1 teaspoon kosher salt

* 1 cup cherry tomatoes sliced
* ½ cup radishes thinly sliced
* 3 scallions stalks – chopped
* ½ cup kalamata olives

How To Make Baked Asparagus & Asparagus Salad Recipe

With crisp-tender asparagus, sweet peas, and a bright and tangy lemon dressing, the recipe showcases the best of spring produce in an easy, yet sophisticated salad.

Asparagus Salad

extra virgin olive oil

Dijon mustard

kosher salt (+

pepper

shallot (thinly sliced)

pistachios (shelled and chopped)

mint leaves

¼ cup crumbled feta (optional)

Wash 1 lb asparagus, trim and discard the woody bottoms, and chop into 2-inch pieces.

Bring a large pot of water to a rapid boil. Set up a large bowl of ice water to the side. Once the water is boiling, heavily salt the water and drop the prepared asparagus and 1 cup frozen petite peasinto the boiling water. Cook for 2-3 minutes, until the asparagus is just tender and still bright green. Timing will depend on thickness of asparagus. Immediately transfer the veggies to a bowl of ice water using a slotted spoon or spider strainer.

Let the peas and asparagus chill in the ice bath for 2-3 minutes, then drain, and pat dry.

In a large mixing bowl, whisk together 2 tablespoons extra virgin olive oil, 1 tablespoon fresh lemon juice, 1 tablespoon Dijon mustard, 1 teaspoon honey, 1 teaspoon kosher salt, and ½ teaspoon pepper together until well combined and emulsified.

Add the blanched asparagus, peas, and ½ small shallot (thinly sliced) to the mixing bowl with the prepared dressing. Toss to coat and then cover and chill for at least 30 minutes or up to 24 hours.

To serve, transfer the dressed vegetables to a serving dish and top with ¼ cup pistachios (shelled and chopped), 4 fresh mint leaves (sliced into thin ribbons), and ¼ cup crumbled feta. Serve immediately.

This recipe is delicious!  I received many compliments as I served this recipe for Easter dinner.  I left out the pistachios due to a dietary restriction. Not wanting to shell out the money for the fresh mint, I used  dried mint leaves instead.  Thank you for sharing this winning salad recipe.
