Cold Soba Noodles

Kombu kelp (*about 2 inch(5cm))

Bonito flake (Katsuobushi) (*10 grams)

tbsp shredded nori seaweed

tbsp finely chopped scallions

tbsp Tenkasu (*4)

tbsp finely sliced myoga

tbsp grated ginger

soak the noodle

Place soba noodle in a shallow container and add enough water (not listed in ingredients) to just cover the noodles for 15 minutes.

start to heat the water

While the noodle is being soaked in water, start to boil 12 cups of water in a large pot over high heat.

Also make the dipping sauce at this point following the instructions below.

Add oil to the pot

Remove noodle from soaking water

Remove the noodles from the soaking water and put them into the boiling water in the large pot.

Place the water and kombu kelp in a small saucepan over high heat to bring it to boil.

Add bonito flake

Add the bonito to the saucepan and turn the heat off.

Drain the dashi stock and add mirin and soy sauce

Drain the dashi stock and add mirin and soy sauce.

(70 milliliters) mirin

tbsp (10 grams) sugar

Add dashi, soy sauce, mirin, and sugar into a saucepan and bring to a boil, stirring to ensure the sauce is well combined. Set aside to cool, or place in the fridge/freezer to speed up the process.

Cook noodles according to package instructions. Drain and rinse the noodles under ice-cold water tossing them to cool evenly, and drain them of excess water. Garnish your noodles with shredded nori, sesame seeds, and/or microgreens as desired.
