Crescent Roll Veggie Pizza is one of my most popular recipes and everyone raves about it.  A flakey crust topped with creamy dill dip and topped with fresh vegetables. It's perfect for a light lunch or a party appetizer any time of the year.  

Crescent Roll Veggie Pizza

tubes of refrigerator crescent rolls

cream cheese

sour cream

envelop of dry ranch salad dressing mix

TBS of dill weed

broccoli

carrots

red bell pepper

yellow bell pepper

cucumber

Preheat the oven to 350° as directed on the crescent roll package instructions.

Dice all of the vegetables.

Spread crescent rolls across the cookie sheet so that cover the entire cookie sheet.

Using your fingers pinch the perforations on the crescent rolls to seal them together. 

Bake according to crescent roll package instructions.

Cool completely before adding toppings (you can also cool it and lightly cover it with a paper towel or plastic wrap and leave on the countertop overnight).

In a medium-sized bowl, add softened cream cheese, sour cream, ranch dip, and dill; stir until fully mixed.

Spread the ranch dill dip all over the baked and cooled crescent roll pizza base.

Add chopped mixed veggies in this order, broccoli, cucumber, yellow bell peppers, red bell peppers, carrots.

Cut into equal squares and serve.

Vegan Cold Veggie Pizza

tubes crescent roll sheets

vegan cream cheese (2 (8 oz) packages)

vegan mayo

parsley

dill

garlic powder

salt

black pepper (or red pepper flakes

broccoli florets

cauliflower

carrot

Preheat the oven to 375° F (190° C) and set out 2 packages of vegan cream cheese on the countertop to warm up for about 15-20 minutes.

Remove crescent rolls from the cans and lay them evenly across each half of a greased cookie sheet forming 1 large pizza crust. Press the seams together in the middle and poke with a fork a few times to reduce it bubbling up when baking.

Bake for about 12 minutes or until golden brown. Let cool.

Make the crust

Place cream cheese and mayonnaise in a large mixing bowl.  Sprinkle with, parsley, dill, garlic powder, salt, and pepper, and blend with an electric mixer for about 1 minute until it's smooth and creamy.

Spread cream cheese mixture onto cooled crust.

Make the herbed cream cheese

Place 4 cups of rough-cut veggies (like broccoli, carrots, broccoli, and bell peppers) into a food processor and pulse a few times until the vegetables are cut into small pieces.

Sprinkle the cut veggies and other desired toppings on top of the cream cheese mixture.

Use a pizza cutter or large knife to cut into squares. Serve immediately or store in the refrigerator until ready to serve.  (It's best when served within a few hours.)
