Coleslaw Pasta Salad is a fun twist to traditional pasta salad. Ditalini pasta with coleslaw and lots of other delicious and crunchy mix-ins for pasta salad that is always a hit.

Coleslaw Pasta Salad

box (16 oz) ditalini pasta

(14-16 oz) coleslaw mix

sweet onion (finely chopped)

celery ribs (finely chopped)

cucumbers (peeled, seeded, & chopped)

green pepper (chopped small)

(8 oz) sliced water chestnuts (drained & chopped small)

eggs

mayonnaise

sugar

apple cider vinegar

salt

pepper

Cook pasta according to package directions; drain pasta and rinse in cold water. *Don&#039;t forget to add salt to the cooking water. I add about 2 teaspoons. 

Transfer pasta to a large mixing bowl. Add the coleslaw mix, onions, celery, cucumber, green pepper, water chestnuts, and eggs. Mix together.

In separate bowl combine the dressing ingredients and stir with a whisk. Pour over the pasta salad and stir well to combine.

Cover and refrigerate for 4-6 hours before serving.

COLESLAW PASTA SALAD

Tangy, slightly sweet dressing is tossed with crisp cabbage and bite-size pasta to make this unexpected and delicious pasta salad.

dijon mustard

granulated onion or onion powder

celery seeds

coleslaw mix

Cook the pasta according to package directions, drain and rinse with cold water. Set aside. In a large bowl, stir together the mayonnaise, mustard, vinegar, sugar, salt, onion, and celery seeds.

Add the pasta to the bowl and stir well to coat. Add the coleslaw mix and toss to combine thoroughly. Serve immediately or refrigerate until ready to serve. Toss again before serving.

This easy Vegan Macaroni Salad is my go-to pasta salad. It tastes just like the classic creamy pasta salad I remember from my childhood, but this one is all vegan. Easily made gluten free and no chopping required! Ready in less than 30 minutes!

Vegan Macaroni Salad

macaroni noodles

green peas

white vinegar

organic cane sugar

yellow mustard

salt (or

black pepper (or

parsley

Cook the macaroni noodles in well salted water according to package directions until al dente. Place the frozen peas in the bottom on a large colander and pour the cooked pasta over the top. Drain well and set aside to cool.

In a small bowl, whisk together the vegan mayo, vinegar, mustard, sugar, salt and pepper until smooth. Set aside.

In a large mixing bowl, add the coleslaw mix and cooked pasta and peas. Pour in the dressing from step 2 and mix well to incorporate all the ingredients with the dressing.

Taste and adjust seasoning as necessary. Stir in fresh chopped parsley, if using.

Cover and refrigerate until ready to serve.
