The complete guide to cooking vegan hot pot, whether you’re hosting a Chinese New Year party or just want to go all out on a delicious meal because why not! (The recipe given below is just one of numerous ways to enjoy hot pot. Please see the detailed guide in the post.)

How to Cook Vegan Hot Pot

water

tbsp mushroom bouillon powder (*can sub with 1½ tbsp MSG)

1½ tbsp salt (25 grams)

lb mushrooms

shiitake mushrooms

peanut oil (*optional)

tbsp dried goji berries

fresh ginger, sliced

nori (*optional)

tbsp sesame oil (12 grams)

head garlic, mashed (25 grams)

salt

Combine all the Mushroom Soup Base ingredients together in a hot pot and bring to a boil on high heat. (If using storebought soup base, follow package ingredients.)

While soup base is heating, mix together the garlic and sesame oil, and salt to taste. (See Dipping Sauce section of the guide above for some other dip options.)

Set your hot pot ingredients of choice on the dining table. Once the soup comes to a boil, add some of the ingredients (don’t overfill the pot) and let it return to a boil. Remove the ingredients that are fully cooked to your individual bowl, leaving the rest to continue cooking. Add more ingredients. While the food in the pot is boiling, you can eat the portion in your bowl, pairing with dipping sauce if desired. Repeat until you’re stuffed!

Yubuchobap are Korean fried bean curd pockets stuffed with sushi rice, basically the Korean version of inari. Sweet, savoury, sour, and addictive. Easy to make!

Yubuchobap (Korean Bean Curd Pockets)

White Rice (= 3 cups cooked rice)

yubuchobap kit (approx. 16 to 20 pockets; see Note 1)

Empty the vinegar sauce and dried seasoning packets into the rice while it’s still hot and mix well (see Note 1).

Optional: To make spicy yubuchobap, mix buldak hot sauce into the rice. You can add as much sauce as you want depending on how spicy you like it.

Open up each fried tofu pocket. Using a spoon or small rice paddle, stuff the seasoned rice into each pocket. It’s as simple as that!

These were delicious!! You were right, definitely had to make more than I expected because a few mysteriously disappeared on their way from the kitchen to the dining room 😋
