Our Company Potatoes Recipe is a down-home comfort dish, perfect side dish for holiday meals.

7-Ingredient Funeral Potatoes Recipe

bags frozen Potatoes O’Brien mix, (thawed (28-ounces bags))

sour cream ((could be low fat))

cheddar cheese

salsa verde, (or green enchilada sauce)

chicken

corn flakes, (crushed)

butter

Preheat the oven to 375 degrees F. Pour the potatoes, sour cream, salsa or enchilada sauce, shredded cheese, and chicken base in a  3 quart baking dish. Mix well, and spread out evenly.

Place the cornflakes in a plastic zip bag. Zip closed and crush the corn flakes. Then pour in the melted butter and toss to coat.

Sprinkle the buttered cornflakes evenly over the top of the potatoes. Cover the pan with foil.

Bake covered for 45 minutes. Then remove the foil and bake another 10-15 minutes, until bubbly. Serve warm.

Parsley Potatoes (Company-Worthy Potatoes)

lbs yukon gold potatoes

tsp sea salt (for boiling potatoes + more

bay leaf (optional)

unsalted butter (or 12 Tbsp, melted)

parsley (finely chopped (1 cup))

Scrub potatoes with a clean scouring pad or the rough back of a sponge (no need to peel them). Slice potatoes into 1 - 1 1/2" thick pieces, transfer to a pot and add enough warm water to barely cover potatoes. Sprinkle with 2 tsp salt add bay leaf.

Bring to a boil then boil partially covered for about 15 minutes or until easily pierced with a fork. Drain potatoes. Drizzle with melted butter and toss to coat (note: it's easier to toss in a large mixing bowl).

Sprinkle with 1/2 tsp salt or to taste. Add 1 cup chopped parsley and toss to combine. Toss again just before serving to re-coat with any butter that has collected at the bottom.
