This Confetti Cake Recipe is delicious, and moist, and holds up well for tiered cakes or carving.

Confetti Cake Recipe

1 (15.25 oz) white cake mix

cup (200 grams) sugar

½ cups (185 g) all-purpose flour (OR 1 cup of AP flour + ½ cup extra cake mix)

⅓ cup (360 ml) water

(5 ml) vanilla extract

tsp (5 ml) almond extract (or omit the almond and do 2 tsp. of vanilla)

4 egg whites (for true white)

cup (8 oz. or 25 g) sour cream

Tbsp. (30 ml) vegetable oil

Mix all dry ingredients by hand using a whisk in a very large mixing bowl.

Add the liquid ingredients and beat on low speed for 2-3 minutes, until well combined.

Bake at 325° (time depends on the size pans used*). I bake cupcakes for 18 minutes or cakes in 8" round pan for 40-45 minutes.

Cool in the pan for 5-10 minutes then flip out onto a cooling rack to cool completely.

Fill &amp; frost with Vanilla Buttercream or Cream Cheese Buttercream.

I just love how happy confetti cakes are! This cake recipe comes out perfect every time, and it tastes great! 

Years ago, I learned the hard way not to use nonpareils! 

This is the best confetti cake recipe, even better than a boxed Funfetti cake mix! It's made from fluffy white cake loaded with rainbow sprinkles, perfect for frosting and decorating. 

Confetti Cake

flour

sugar

tsp baking powder

salt

vegetable shortening

milk

Tbsp vanilla extract

½ cup rainbow sprinkles

Preheat oven to 350°F. Grease two 8-inch cake pans, line the bottom of the pans with parchment paper, and grease again. Lightly dust the pan with flour. Set aside.

In the bowl of your stand mixer combine flour, sugar, baking powder, and salt. Add in shortening and beat over medium speed until the mixture is smooth and combined. Add in both milk and vanilla extract. Beat for 2 minutes on medium speed.

Finally, add egg whites and continue to beat the batter for 1-2 minutes, until it&#8217;s very smooth.

Divide the batter evenly between the two prepared pans. Bake for 20-25 minutes until a knife inserted into the center of the cake comes out clean.

Allow the cake to cool in the pan for 10 minutes, then invert it onto to wire rack to finish cooling.

Frost with Perfect Vanilla Buttercream Frosting and top the cake with Streusel Topping if desired.

how long would i put the cake in the oven if im making cupcakes?

☹️ Could you clarify what you mean by “rainbow sprinkles” in your recipe, please?  I specifically purchased the sprinkles (which are tiny rainbow-colored  bb’s) instead of the jimmies (which are the little log-shaped confection).  As soon as I began to stir the sprinkles into the cake batter they melted and turned the batter gray!  This is a birthday cake for my God-daughter, and I don’t think I can serve it to her - it looks SO unappetizing!!

This is the PERFECT funfetti cake recipe! It's super moist, soft, and loaded with sprinkles. 

Funfetti Cake

(220 grams) unsalted butter, room temp

(400 grams) granulated sugar

(110 milliliters) vegetable or canola oil

eggs, room temp

tbsp vanilla extract

(435 grams) all purpose flour

tsp baking soda

(125 grams) full fat sour cream, room temp

(225 milliliters) buttermilk*, room temp

(140 grams) rainbow jimmies sprinkles

(330 grams) unsalted butter, room temp

(600 grams) powdered sugar

(90 grams) sprinkles

Preheat the oven to 350F and grease and line the bottoms 3 &#8211; 9&#8243; cake pans with parchment paper. You can also use 3 &#8211; 8&#8243; cake pans but you will need to leave out about 1 cup of batter (If the pans are overfilled the cakes will sink in the middle. Make sure to only fill the pans a little over halfway). Line the pans in cake strips if you have them.

Whisk together the flour, baking powder, baking soda, and salt and set aside.

Using a hand or stand mixer, cream together the butter and sugar until light and fluffy mixing on medium high speed for 3-5 minutes with the whisk attachment. *see picture in post for reference

With the mixer running on low, pour in the oil. Scrape down the bowl and give it another mix.

Mix in the eggs one at a time followed by the vanilla. Scrape down the bowl after every 2 eggs.

With the buttermilk and dry ingredients, mix into the batter alternating between the two, starting and ending with the dry ingredients (dry, wet, dry, wet, dry). 

Take the bowl off the stand once the batter is combined. Take a rubber spatula and give it a good mix, scraping down the bottom and sides of the bowl. Then, fold in the sprinkles.

Pour into your cake pans and spread it even. For 9&#8243; cakes, bake for 30-35 minutes. For 8&#8243; cakes, bake for 35-40 minutes. They&#8217;re ready when a toothpick in the center comes out clean.

Allow the cakes to cool in the pans for 30 minutes, then run a knife around the edges and turn them out on to a cooling rack and peel the paper off. If you&#8217;re frosting the cake that day, transfer the cakes (still on the cooling rack) to the fridge to completely chill before assembling (about 1 hour). If baking the cakes a day ahead, allow the cakes to cool to room temp on the rack for 1 hour, then wrap in plastic wrap and place in the fridge overnight.

Mix the butter using a hand or stand mixer with the whisk attachment until smooth.

Mix in one cup of powdered sugar at a time, adding the vanilla and milk as it begins to thicken.

If the buttercream is still too thick when you&#8217;re done, add another tablespoon of milk.

Buttercream

Spread a thin layer of buttercream between each cake layer, then give the entire cake a thin crumb coat. Do so by spreading a very very thin layer all around the cake, just enough to enclose all of the crumbs. Place the cake in the fridge for 20 minutes.

Frost the cake with the rest of the buttercream and decorate with extra sprinkles. Enjoy!

I made this with gluten free flour and purple &amp; orange sprinkles for the 2 birthday people.  It was a hit. Everyone raved about it. Delicious!!
