These healthy, 100 calorie treats are easy to make, super delicious, kid-friendly, and decadent; but are also vegan, gluten-free and low in sugar!

No Bake Peanut Butter Balls

oats oats

peanut butter (or any nut butter will work!)

mini dark chocolate chips

maple syrup (increase to 2 tbsp if you want it to be sweeter)

tsp vanilla extract

sea salt

In a large bowl, using a wooden spoon, stir together the oats, peanut butter, chocolate chips, maple syrup, vanilla and salt until combined.

Line a baking sheet with parchment paper.

Taking small handfuls of the mixture, roll them into small balls 1-2 inches in size. Or you can use a cookie scoop. Place them onto the baking sheet.

Refrigerate the bites for 30 minutes or until solid. Store in an air-tight container in the fridge (they will last at least 1 week, and likely 2!)

No-Bake Sugar Cookie Bites

oat flour ((certified gluten-free as needed))

almond flour ((not meal))

sea salt,

Tbsp coconut oil

maple syrup

Tbsp melted coconut butter

Shredded / desiccated coconut

Vegan-friendly sprinkles ((gluten-free as needed))

Line a small baking sheet or flat plate with parchment paper. Set aside.

In a medium mixing bowl, whisk together oat flour, almond flour, and salt. Next add coconut oil, maple syrup, and vanilla extract. Stir with a spoon until dough comes together and resembles cookie dough. It should be slightly tacky but not stick to your hands, and it shouldn’t be crumbly. If too dry, add a bit more maple syrup or melted coconut oil.

Taste and adjust flavor as needed, adding more maple syrup for sweetness, vanilla to taste, or salt to balance / enhance the flavors.

Using a 1-inch cookie scoop, scoop out dough and roll into balls. We recommend placing the dough in the palm of one hand and using gentle pressure with the middle three fingers of your other hand to roll into a ball. If they’re too crumbly, they likely just need a bit more maple syrup or melted coconut oil to help moisten. They don’t roll quite as easily as date bites (which are stickier) but do hold together well once rolled.

Place cookie bites onto the parchment-lined plate or baking sheet. If topping only with sprinkles, roll the bites in sprinkles and place in the refrigerator for 15 minutes. If adding glaze, chill the bites for 15 minutes in the refrigerator or freezer before adding glaze.

GLAZE: Melt coconut butter until just spoonable / pourable. Then drizzle onto the chilled sugar cookie bites. Option to decorate with sprinkles or shredded coconut. Transfer back to the refrigerator or freezer to chill for 15 minutes, then enjoy!

Store leftovers covered in the refrigerator for up to 1 week, or in the freezer for up to 1 month. Best enjoyed chilled or at room temperature.

These no-bake cookie dough bites are sweet, doughy and full of chocolate chunks! They&#039;re great for a sweet-tooth fix.

Cookie Dough Bites

gluten-free oats

almond flour ((ground blanched almonds))

almond butter

tbsp coconut oil (melted)

tsp sea salt

chocolate chips

Pulse oats in a blender or food processor until finely ground. In a large mixing bowl combine the oat flour, almond flour, almond butter, maple syrup, melted coconut oil, vanilla extract, and sea salt. Mix well to combine.

Add chocolate chips and mix again to combine. Then, form dough balls by rolling dough with hands (about the size of a ping-ping ball). Continue rolling until you&#039;ve used all your batter.

A few simple, healthy ingredients make delicious little cookie dough bites!

Chickpea Cookie Dough Balls

large, soft medjool dates

chickpeas (1 can, rinsed and drained)

peanut butter (or powdered peanut butter

oats

tsp salt

If your dates are hard, soak them in hot water for about 10 minutes, then drain. In a food processor, pulse the dates until they are fine and clump into a ball.

Add the remaining ingredients and pulse until well-combined. You can add the chocolate chips before or after this, depending on if you like them chopped up or whole.

Roll into balls,. Makes 20-30, depending on the size. Enjoy! Keep in the fridge.

Super quick recipe. I'm so glad I tried these. My kids beg for more and more of these. I never would have guessed they were made with a bean.

Umm…. I love these. Especially when refrigerated on a hot summer afternoon. They are so satisfying and refreshing. I tried both blending the chocolate in the food processor and just mixing in chocolate chips when rolling them into balls. Both ways are fine and yummy, but I prefer mixing in the chips. (Makes it look more like cookie dough). I’ve made these for family, friends, and other guests and everyone liked them. Thanks for the recipe!
