cookies with oatmeal

A scrumptious, soft and chewy oatmeal chocolate chip cookie recipe. These cookies are great to make in a hurry. No need to chill the dough!

Oatmeal Chocolate Chip Cookies

salted butter (room temperature)

light brown sugar (220 grams)

sugar (100 grams)

eggs

vanilla extract (6 grams)

all-purpose flour (195 grams)

baking soda (5 grams)

salt (3 grams)

old fashioned rolled oats (312 grams)

Preheat oven to 350ºF. Prepare baking sheets by lining them with parchment paper or nonstick baking mats.

In a large bowl, using a hand mixer or stand mixer with the paddle attachment, cream together the butter, sugars, eggs, and vanilla until smooth.

Stir together the flour, baking soda, and salt in a separate small or medium bowl.

Add the flour mixture to the wet ingredients and mix until combined, scraping the sides of the bowl as needed.

Mix in the oats until combined.

Mix in the chocolate chips, chopped chocolate and walnuts.

Using a cookie scoop, drop cookie dough balls onto prepared cookie sheets. Flatten slightly with the bottom of a glass if you&#39;d like the cookies to be flatter.

Sprinkle the tops with coarse sugar if desired, or press a few chocolate chips into the top of the cookies before baking. This makes them extra pretty.

Bake 10 minutes. Don&#39;t overbake.

Let them cool for 2-3 minutes on the cookie sheets before them to a wire rack to cool completely.

Store in an airtight container at room temperature for up to 5 days. Freeze cookies for up to 8 weeks.

Iced Coconut Oatmeal Cookies

Preheat the oven to 350º Fahrenheit.

In the bowl of a stand mixer, use the paddle attachment to cream together the butter and sugars.

Add the eggs and vanilla. Mix again.

In a separate bowl, mix the dry ingredients (all of the remaining cookie ingredients). Whisk well.

Add the dry ingredients into the wet ingredients and mix until combined.

Use a cookie scoop to scoop the dough and place on a cookie sheet lined with parchment paper or a non-stick baking mat.

Bake the cookies for 8-10 minutes or until the edges are barely brown. Don't over bake the cookies.

Allow the cookies to cool for 3-4 minutes on the baking sheet, then move them to a wire rack to cool completely.

Whisk together the powdered sugar and 2 tablespoons of milk until smooth. Add another tablespoon of milk if the consistency is too thick.

Dip the top of the cookie in the icing (or use a spoon to drizzle the cookies with icing) and place them on the wire rack for the icing to set.

Once the icing has set, store the cookies in a single layer in an airtight container.
