Mildred&#39;s Famous Blueberry Buttermilk Pancakes

white sugar

salt

all-purpose flour

baking powder

baking soda

eggs

buttermilk

unsalted butter

blueberries (or frozen)

And some extra unsalted butter

 In a large bowl, sift together the flour, sugar, salt, baking powder and baking soda.

In a separate bowl, beat the eggs with the buttermilk and melted butter.

Using a spatula, combine the dry and wet ingredients to make a thick, lumpy batter, taking care not to overmix.

In a nonstick skillet, melt some butter over medium-high heat. Ladle ⅓ cup of batter into the hot skillet and sprinkle with blueberries. Take care not to overcrowd the skillet, since the pancakes will puff up as they cook.

When bubbles appear on the surface of the pancake and the edges begin to brown, flip the pancakes and cook the other side. It should take about 2 to 3 minutes per side. Keep them nice and warm for mom by keeping them in a 250ºF oven.

Smother with maple syrup, fresh blueberries, dollop with whipped cream and maybe even a good dusting of icing sugar.

Surf and Turf Fried Rice (Shrimp and Steak)

New York striploin steak

lb shrimp, peeled and deveined

mushrooms (like portobello)

tbsp extra virgin olive oil

garlic cloves,

onion diced

eggs,

tbsp kosher salt

lemon juice (optional)

scallions (white and green), thinly sliced

tbsp black pepper

red chili flakes (optional)

vegetable oil

tbsp butter

garlic clove, minced

thyme

red chili flakes

rosemary

ginger

soy sauce

sesame oil

rice

Salt and pepper,

Melt 1 tablespoon of butter in a skillet set over medium-high heat. Add the shrimp and cook, stirring often until it just begins to turn pink.

Remove steak from refrigerator and pat dry with paper towel. Salt liberally on all sides and let rest at room temperature for one hour to come to room temperature.

Heat 1 tablespoon of vegetable oil in a well-seasoned wok or large non-stick skillet over medium-high heat. Swirl to coat the pan. 

Stir in the minced garlic, remaining butter, red chili flakes and parsley, continue to cook until the shrimp is fully pink and opaque, about 3 minutes. Add lemon juice (optional).

Add onions to pan and sautée until softened and translucent. Add mushrooms and sautée until cooked. Remove onions and mushrooms into a small bowl and set aside.

Serve steak and shrimp over fried rice and enjoy this indulgent feast!

Place cast iron skillet on stove and heat up on medium before beginning to cook (roughly 5 minutes).

Pour eggs into pan and scramble until just done. Remove into a small bowl and set aside.

Add oil to pan, swirl to coat and turn to high heat. 

Wipe out pan with paper towel and heat remaining tablespoon of vegetable oil over high heat. Add scallions and any desired veggies and stir fry for one to two minutes. Add the onions, mushrooms and eggs back into the pan. Add chili, garlic, and ginger, stir fry for 1 minute more. Add soy sauce, sesame oil and rice and stir fry for 2 to 3 minutes. 

Season steak on all sides with freshly cracked black pepper and place steak down in pan.

Taste and adjust seasoning with soy sauce, salt and pepper.

Add butter, minced garlic, thyme sprig and rosemary sprig to the pan. Baste the steaks with the melted butter for 3 minutes.

Remove skillet from stove and place in preheated oven for 2 to 4 minutes, depending on desired doneness (3 minutes will yield a medium steak).

Remove skillet from oven and place on stove. Cover and let rest for 5 to 10 minutes then slice

This easy-to-make, Rich Homemade Lobster Stock recipe is great when wanting to add depth of flavor to seafood soups, stews, risotto, chowders and sauces.

Rich Homemade Lobster Stock

water

Heat the water in a large stockpot just to under a boil. Add a teaspoon of salt.

Add any uncooked, shelled lobster to the water.

Once the shells turn red, and the meat is almost cooked through, transfer the lobsters to an ice bath to stop the cooking process.

If using precooked lobster, add them to the water to thaw or warm through, for just a minute or two.

Once cooled to the touch, remove the meat from the shells and refrigerate the lobster meat for later use.

In the same water used to cook the lobster, add in the white wine, lobster shells, celery, onion, garlic, salt, thyme, parsley, bay leaves, seafood seasoning and peppercorns.

Allow the mixture to simmer over medium to medium-low heat for about 45 minutes, allowing the flavors to meld together.

Using a mesh strainer, carefully strain the stock to remove any solids. For a clearer stock, double strain if desired.

If using the lobster stock immediately, keep warm in a saucepan.

If storing, allow the stock to cool completely before transferring it to storage containers. Store in the refrigerator for up to a 5 days, or freeze for longer storage.
