Caramel Pecan No-Bake Cheesecake

(17.2-ounce) famiyl size package Pecan Sandies Shortbread Cookies (32 cookies)

unsalted butter (1 stick), melted

salt (optional)

(8-ounce) blocks cream cheese, room temperature

sugar

(16-ounce) container frozen whipped topping (Cool Whip), thawed

vanilla extract

(12.25-ounce) jar caramel sauce

Use a food processor or food chopper to crush the cookies into crumbs. Optionally, you can place the cookies in a large ziptop bag and crush them using a meat mallet or rolling pin. Reserve 1 cup of the crumbs for the topping and set aside.

In a large bowl, combine the crushed cookies with the melted butter and salt. Stir to combine, ensuring the cookie crumbs are well coated. Pour the mixture evenly into a 9x-13-inch baking dish and firmly press to create the crust. I like to use the bottom of a 1/2-cup dry measuring cup for this. Set aside.

Use a mixer to combine the cream cheese and sugar until smooth and well blended. Gradually add the whipped topping and mix after each addition - being sure to scrape down the sides of the bowl. Add the vanilla and mix well.

Spread the mixture evenly over the crust. Pour the caramel sauce over the top of the cheesecake filling and then sprinkle the reserved 1 cup of cookie crumbs over the top. Cover and refigerate to allow the cheesecake to set. Slice and serve.

Drain the pineapple and the orange segments very well.  Set aside.

Drain the cherries and slice each one in half.  Rinse the cherries well and allow to drain.  Set aside.

In a large bowl, mix together the whipped topping and the sour cream.  Add in the coconut and mini marshmallows.  Fold in the drained pineapple, oranges, and cherries.  Add the pecans and gently stir to combine.  Cover and chill in the refrigerator for about an hour before serving.

Kad se smjesa za kuglice stisne napravite kuglice koje poredate u protvan veličine 20x30, u četiri reda po sedam kuglica. (svaka kuglica mi je težila 20 grama).

U dio sa svježim sirom dodajte snijeg od bjelanjaka.

Pecite na 170 stupnjeva dok ne dobije lijepu boju. (oko pola sata).

(100 gram) pouch frozen unsweetened acai puree (slightly thawed according to package directions)

Place acai puree, berries, banana, milk, vanilla, and maple syrup into a high powdered blender.

Blend until smooth (I used the smoothie function on the Vitamix with the tamper).

Pour into a bowl, top with your favorite toppings, and enjoy immediately!

Slow-cooked beef cheek

⅕ kgs Beef cheeks, 1 cheek per serve (Main)

Heat the oven to 140C. Bring the beef stock to the boil. Heat the oil and fry the vegetables, garlic and tomato paste for 10 minutes to lightly caramelise. Turn the heat up to high, add the red wine and reduce by half.

Season the beef cheeks with salt and pepper then place them in an ovenproof casserole (or use a slow cooker). Add in the reduced wine and vegetables. Add the herbs and cover with beef stock.

Cover with a tight-fitting lid and cook in the oven for 3 hours.

To make the glazing sauce, strain off half the cooking juices into a saucepan, bring this to the boil and reduce until thick and syrupy.

To serve, gently reheat the cheeks in the remaining cooking juices. When hot, carefully lift them out and place them into the glazing sauce. Smother with sauce and serve with creamy potato mash and a warm salad of greens (I have steamed brussels sprout leaves, peas, and broad beans, then tossed them with a little olive oil and sea salt flakes).

1-lb box elbow macaroni or bowtie pasta

Bring water to boil for pasta. Cook according to package directions and drain. Rinse with cold water and toss with 1 tablespoon olive in a large bowl. Set aside.

In a medium bowl pour in 1 tablespoon olive oil. To that whisk in vinegar and lemon juice. To the emulsion add mayonnaise, mustard, Tabasco sauce, water, and blend well. Mix in shallots, bell pepper, celery, paprika, Cajun seasoning, salt, and pepper.

Add dressing to pasta and stir well to coat. For best taste let mixture sit together for at least half an hour so that flavors can combine.
