A delicious summer corn pasta salad that every picnic needs from Delish.com.

Bacon, Corn, Spinach, and Ranch Pasta Salad

lb. bowtie pasta

corn, kernels stripped

c. baby spinach

c. ranch dressing

kosher salt

Black pepper

Loved the flavor, texture  and crunch.  I made homemade ranch dressing and added home grown cherry tomatoes😋.  Roasted my corn kernels with olive oil in toaster oven.

I've made it many times and a huge hit with the kids.

This amazing Corn Pasta Salad is loaded up with fresh crisp veggies, roasted sweet corn, thick-cut bacon, and a tangy chili-lime dressing.

Corn Pasta Salad

olive oil

(15 ounces) corn kernels, (drained)

avocado, (diced)

green onions, (thinly sliced)

cilantro, (finely chopped)

jalapeno

bacon,

feta cheese, (crumbled)

(15 ounces) black beans (drained and rinsed)

mayonnaise

lime juice, (approximately 2-3 limes)

cumin

paprika

chili powder

hot sauce

salt and pepper, (to taste)

Cook pasta. Drain the noodles and toss with olive oil.

Cook the pasta according to package directions. Drain the noodles, toss them with olive oil, and set them aside.

Roast corn in skillet.

In a large cast-iron skillet over high heat, add the corn kernels in a single layer. Heat just until slightly charred (2-3 minutes). Then, flip to char the second side. Remove from heat and set aside.

Mix corn with rest of salad ingredients.

In a large bowl, mix together the cooked pasta, corn, avocado, green onions, cilantro, jalapeno, bacon, feta, and black beans.

Make dressing.

In a separate bowl, make the dressing by whisking together all the ingredients.

Drizzle dressing over salad and toss to coat.

Delightful Corn Pasta Salad

pasta (rotini, fusilli,

corn kernels (or canned/frozen)

cherry tomatoes, halved

bell pepper, diced

red onion, finely chopped

cucumber, sliced

cilantro

feta cheese (optional)

black beans (optional)

tbsp red wine vinegar (or lime juice)

Dijon mustard

tsp honey

Salt and pepper,

Cook the Pasta

Boil the pasta in salted water until al dente. Drain, rinse with cold water, and set aside.

Prepare the Corn

If using fresh corn, roast it in a skillet with a little olive oil until lightly browned. Set aside to cool.

Chop the Vegetables

Dice the bell pepper, halve the cherry tomatoes, chop the onion, and slice the cucumber.

Make the Dressing

In a small bowl, whisk together olive oil, vinegar or lime juice, mustard, honey, salt, and pepper.

Combine

In a large mixing bowl, combine the cooked pasta, corn, vegetables, and black beans (if using).

Add Dressing

Pour the dressing over the salad and toss everything gently to combine.

Finish

Sprinkle with fresh cilantro or parsley and crumbled feta cheese if desired.

Serve

Chill in the fridge for 15-30 minutes before serving for best flavor. Enjoy!
