These Spicy Corn Ribs are coated in a spice mix of smoked paprika and cayenne pepper, with garlic and onion powder, sea salt, cracked pepper and olive oil, and cooked in an air fryer for just 15 minutes. Now these corn ribs are on the spicy side, so to balance this out, I have made a zingy Coriander Cream. Its as simple as adding sour cream, coriander, fresh lime juice, celery salt, ground cumin and garlic powder into a food processor or blender, and blitzing until silky smooth. The creaminess and acidity balances out the smoky spices flavouring the crispy corn ribs. Basically, this is a match made in heaven and you must make them now. Like, right now.

Spicy Corn Ribs With Coriander Cream

corn, husk removed and cut into quarters

extra virgin olive oil

flaky sea salt

cracked pepper

cayenne pepper

smoked paprika

garlic powder

onion powder

sour cream

Prepare the Corn Ribs seasoning by combining all of the spices and oil into a large bowl and mix well. Toss the corn into the seasoning and coat them well.

Lay the corn ribs in a single layer in the air fryer basket. Leave a little bit of space between each corn rib so air can flow throughout the air fryer.&nbsp;

Cook the corn in an air fryer at 190C for 15 minutes. If you prefer crispier corn ribs, cook them for a further 3 minutes at the same temperature.&nbsp;

While the corns are cooking, place all of your Coriander Cream ingredients into a food processor or blender, and blitz until smooth. Using a spoon, spread the Coriander Cream onto a plate. Set aside.&nbsp;

When the corn ribs are ready, remove them from the air fryer using tongs and stack them on top of the Coriander Cream. Garnish with coriander, sea salt and cracked pepper. Serve with wedges of fresh lime.&nbsp;

Cut corn - Using a sharp knife and a non-slip cutting board, cut off the base and the pointy end of the corn. Stand the corn upright then cut the corn into half then half again to make quarters. My way: Bang the knife with your hand to lock it into the top of the corn, then keep hitting the knife to move it down the corn. Halfway, you might be able to stop banging and just rock the knife down.

Easiest method - Cut half length ribs. Shorter ribs = easier to cut. See note 2.

Corn cutting (Note 1 tips!):

BBQ (best!) or oven - Heat BBQ on high or oven 200°C/375°F (180°C fan).

Garlic butter - Melt the butter in a small saucepan over medium heat. Then add the garlic and cook for 20 seconds until it smells amazing! Remove from the stove and keep warm/liquid (I usually put it on the side of the BBQ).

Seasoning - mix in a small bowl.

Season corn - Place corn in a large bowl. Toss with olive oil. Then sprinkle the seasoning over gradually, tossing in between, to coat as evenly as possible. Most will get stuck in the cob - tasty &quot;bone&quot; sucking!

BBQ - Place corn on the BBQ kernel side down. Cook for 8 minutes or until you get charred spots - watch it curl into &quot;ribs&quot;! Then cook each cut side for 1 minute.

Oven - Bake for 25 to 30 minutes, kernel side up. (Note: the corn doesn&#39;t curl as much, also, no charred spots).

Butter it - Transfer corn back into the bowl. Pour over garlic butter and toss.

Serve - Pile onto plate, sprinkle with parsley then grab and eat like ribs! Optional pink sauce pictured in notes. Don&#39;t forget to suck all the seasoned garlic butter from the cob &quot;bone&quot; - it might be the best part. :)

Mexican Corn Ribs

mayonnaise

jalapeno (minced)

juice from 1/2 lime

paprika

chili powder

salt

cotija cheese (crumbled)

fresh cilantro (diced)

Heat grill to medium.

Clean corn ears from husks.

With a sharp chef&#39;s knife, cut off the ends of the corn, cutting just above the top of the stem.

Use your knife to score corn ear in the middle, and the use your hands to gently break ears in half.

Stand the ears halves up on the cut end on the cutting board. Use your knife to gently apply pressure to the core, and rock the knife back and forth to slowly cut through the center of the core, rocking the knife back and forth to cut through the whole half, holding the corn steady.

Place the half core down on the cutting board, and use your knife to gently cut in half again, thorugh the kernals.

Repeat with all corn.

Prep Corn Ribs

Once your ears are prepped and while your grill heats, mix youre spices in a small bowl.

In a medium sized bowl, add mayonnise, sour cream, lime juice, and jalapeno and mix well.

Spices and Sauces

Line ribs on a tray and spray (or brush) each rib with oil.

Sprinkle on some of the seasoning to each rib.

Add ribs to grill, cut side down. Close lid and cook for about 8 minutes.

Open, flip ribs to other cut side and cook for another 6-8 minutes.

Cook the &quot;Ribs&quot;

Transfer the ribs back to the tray.

Brush on cream mixture, sprinkle with cheese, and top with fresh cilantro.

Air Fryer Corn (Corn Ribs)

Corn (fresh)

tbsp Olive Oil (or dairy free butter)

Paprika

tsp Garlic Powder

tsp Liquid Smoke (optional)

Salt

Water (for boiling)

Prepare

Remove husks and silks from fresh corn. Boil each cob in a large pot of water for up to 3 minutes to soften the husk. Run under cold water for 45 seconds to cool.

Lay corn flat on a cutting board and trim ends. Stand corn upright and split lengthwise with a sharp knife. Cut halves into quarter lengths or smaller ribs as desired.

Air Fry

Make marinade with olive oil, paprika, garlic powder, salt, and liquid smoke. Brush ribs with seasoned oil or rub with your hands. Arrange in a single layer in air fryer basket. Air fry at high setting for 10-12 minutes or until tender and crispy. Serve hot with lemon or lime wedges and your favorite sauce. See suggestions below.
