Corned Beef Spice Packet Recipe

coriander

tsp peppercorns

mustard seeds

tsp anise seeds

bay leaves

tsp crushed red pepper flakes

Toast coriander, peppercorns, mustard seeds, and anise seeds in a cast iron skillet for two to three minutes, or until fragrant.

Add crushed bay leaves and crushed red pepper flakes for the last 30 seconds.

Pour contents of the pan into a spice mill and pulse a few times to release the flavor of the spices.

Store in an air-tight container. 

Use as much of the spice mix as you&#039;d like to season your corned beef before cooking.

Corned Beef Seasoning

coriander seeds

peppercorn

stars of anise (or 1 teaspoon anise seeds)

red pepper flakes

Crush or grind coriander seeds, mustard seeds, and peppercorns to release their flavor: use mortar and pestle or a spice mill to grind them coarsely.  Or add the whole spices to a Ziplock bag and seal it, then crush them with a rubber mallet. Remove star of anise seeds if they are whole. Mix crushed seasonings together with bay leaves, pepper flakes, and star of anise seeds.

Use seasonings right away with corned beef or use a funnel to add the seasonings to an air tight spice jar for storing and use within 6 months.

Add the coriander seeds, mustard seeds, peppercorns, anise seeds, fennel seeds, dill seeds and whole cloves to a skillet on the stove over medium heat.

Lightly toast the seeds for 1-2 minutes, until fragrant.

Add the toasted seeds to a spice grinder, along with the bay leaves and red pepper flakes. Pulse the spices in the grinder into a coarse texture. (See notes below if you don&#39;t have a spice grinder.)

Transfer the ground spices from the spice grinder to an airtight container, like a mason jar, and store in a cool, dark place, like the pantry, for up to 6 months.
