Easy Cornflake Cookies

corn flakes cereal

corn syrup

sugar

salt

peanut butter*

vanilla extract

Place the cornflakes in a large bowl and set aside.

In a medium saucepan, combine the corn syrup, sugar, and salt. Cook over medium heat, stirring constantly to prevent scorching, until the mixture just begins to bubble. Immediately remove from the heat and stir in the peanut butter and vanilla. Stir until smooth. Pour the mixture over the corn flakes and use a large spatula to fold the mixture together.

Once the cornflakes are well coated, use a large cookie scoop or two spoons to portion the mixture out onto wax or parchment paper. Work quickly to prevent the mixture from firming up. Allow to cool completely. Store in an airtight container at room temperature for up to a week.

Cornflake Christmas crack recipe

(3 cups) cornflakes

dark chocolate, coarsely chopped

Step 1

Preheat oven to 180C/160C fan-forced. Line a 20 x 30cm (base size) slice pan with baking paper, allowing the paper to overhang the 2 long sides.

Step 2

Place the butter and sugar in a large saucepan over medium heat. Cook, stirring, until the butter melts and the mixture is evenly combined. Bring to the boil. Cook, stirring, for a further 30 seconds or until thickened. Reduce the heat to low. Add the cornflakes and stir until well combined.

Step 3

Spoon cornflake mixture into the prepared slice pan. Use the back of a spoon to spread evenly. Place a sheet of baking paper over the top, then press paper to flatten mixture and cover any holes. Remove the paper and bake the slice for 5 minutes. Set aside for about 20 minutes to cool slightly.

Step 4

Place the chocolate in a microwave-safe bowl. Microwave on medium, stirring every minute, until melted and smooth. Pour the chocolate over the cornflake mixture. Use a palette knife to smooth the surface. Sprinkle with salt. Place in the fridge for 1 hour or until set.

All you need is 4 ingredients to make these quick and easy no-bake peanut butter cornflake cookies. They&#039;re simultaneously sweet, nutty, crunchy, and ridiculously addictive. 

Peanut Butter Cornflake Cookies

Tear off two large sheets of waxed paper (about 12 x 16 each) and spray them lightly with cooking spray. Set aside on a table or countertop.

Place sugar and syrup in a large pot over medium-high heat. Stir constantly as it comes to a boil. As soon as it comes to a boil, remove it from the heat.

Immediately stir in the peanut butter until smooth. Pour the entire box of cornflakes in and stir rapidly until coated.

Drop spoonfuls onto the greased waxed paper and allow them to cool completely before storing them in an airtight container.

I’ve been planning to make this. Even bought the corn flakes. But, I didn’t know I could use honey? I have some fresh local honey that will be delicious added to these little nuggets of goodness!

Amazingly simple, classic and delicious. I have added things like green and red M&amp;Ms after shaping the clumps into donut shapes to make wreaths. 
The best part is hearing everyone say "oh my gosh I haven't had these in years! :) "

Be careful when you make these...you will want to eat them all!  They are beyond delicious and people will fight over the last one., so be prepared to make extra!  (The fact that they are so easy to make is a blessing here.)  I am thinking of adding some chopped peanuts and shredded coconut to my next batch and maybe even some chocolate chips, as was mentioned in another post.  I think they will be delicious no matter what.

This recipe, I wouldn't make.  I like peanut butter cookies, but not peanut butter in other things.  Odd, I know :)

Oh gosh, I used to make these a long time ago - time to get them back on my cookie list.

Reminds me of my childhood. My mom had Parkinson's so this recipe was one she could make. I'll have to make them and bring back some memories.
