Season the hens with salt and pepper. Spread the lardo in the base of a large skillet set over medium heat. Add 2 of the garlic cloves, and cook, rendering the fat, until the lardo just begins to brown. Discard the garlic.

Increase heat to medium-high and add the hens, skin side down. Cook until skin is golden. Add 2 of the rosemary sprigs, the chilies and the remaining garlic. Turn the hens and add * cup of wine. Cover, lower the heat to medium-low and simmer for 6 minutes. Remove the breast pieces and let the legs simmer for another 5 minutes.

Meanwhile, make the salad: combine the prosciutto, arugula and currants in a bowl. Sprinkle with 1 tablespoon olive oil and toss to mix. Season with fleur de sel, and add more olive oil, if needed.

Remove the lid from the skillet and discard the rosemary. Return the breasts, skin side up to the skillet and pour in the remaining wine. Boil down the juices and baste the hen parts for 1 minute. Pull the pan off the heat, add the butter and swirl to incorporate it.

To serve, sprinkle the hens with rosemary leaves from the remaining sprig, spoon over a little sauce and accompany each piece with some salad.

Broiled Cornish Hens With Lemon And Balsamic Vinegar

Preheat the broiler, and adjust the rack to about 4 inches from the heat source. Use a sharp, sturdy knife to split the hens through their backbones; it will cut through without too much effort. Rub the skin side with olive oil. Flatten the hens in a broiling or roasting pan, skin side down, and liberally sprinkle the exposed surfaces with salt and pepper. Slice one lemon as thinly as you can (a mandoline is best for this) and lay the slices on the birds.

Broil for about 10 minutes, or until the lemon is browned and the birds appear cooked on top; rotate the pan if necessary. Turn the birds over, sprinkle with salt and pepper, and return to the heat. Cook another 10 minutes, or until the skin is nicely browned. Meanwhile, slice the remaining lemon as thinly as possible.

Lay the lemon slices on the skin, and broil 5 minutes. The lemons should be slightly browned and the birds cooked through; if not, cook a couple of minutes more. Drizzle with the balsamic vinegar, garnish with parsley and serve.

Grilled Beer Can Cornish Hens Recipe for Two

This recipe draws inspiration from the old-fashioned rotisserie chickens sold along Seoul’s streets in the 1970s — before Korean fried chicken entered the scene in the next decade. Cornish game hens are an excellent substitute for the smaller, younger birds often used in South Korea for this succulent poultry dish. A simple soy-sauce brine, made even more fragrant with ground white pepper, ensures inimitably juicy, tender meat that, after roasting in the oven for an hour, truly falls off the bone. A nod to pa dak (“scallion chicken”), an early-2000s trend in which shaved scallions were served atop fried chicken to cut the fattiness, this recipe calls for lightly dressed scallions for a verdant counterpoint.

Place a gallon-size resealable plastic bag in a large bowl. To the bag, add the soy sauce, salt, sugar, white pepper and 6 cups cold tap water; stir to dissolve the salt and sugar. Nestle the Cornish game hens into the liquid, seal the bag set in the bowl and place in the refrigerator to brine for at least 8 hours and up to 48 hours.

When ready to cook, heat the oven to 350 degrees. Drain the hens in the sink and pat very dry with a clean towel (the drier the hen, the crispier the skin). Using your hands, massage the olive oil all over the birds and place on a sheet pan, breast side up. Roast, rotating the pan halfway through, until golden brown and the legs, when jostled, feel like they’re about to fall off (a sign that the meat is tender and cooked through), about 1 hour.

Meanwhile, in a small bowl, toss the scallions with the rice vinegar and a pinch of salt and sugar to taste. To serve, top each roasted hen with a mound of the scallion garnish and enjoy with steamed white rice and yangnyeom sauce (if using), for dipping.

Set the Cornish hens out to come to room temperature about 1 hour before cooking.  Preheat the oven to 425 degrees and set a rack to the middle position of the oven.

While the hens are coming to room temperature, make the basting sauce.  In a small sauce pan over medium-low heat, combine the olive oil and butter.

Once the butter has melted add the shallot, garlic, rosemary and lemon slices.  Allow to simmer for 3 minutes and then remove from the heat to cool and infuse.

Stuff each hen with 1-2 onion wedges, 1 lemon wedge, 2 sprigs of thyme, 2 rosemary sprig halves, 2 sage leaves.  Tie the legs together with butcher twine, in a crossed position but not overly tightly.

Spray the sides of an 11-inch by 13-inch baking pan (this helps prevent the sides of the hens from sticking to the pan while cooking), add remaining lemon slices and any of the onion wedges that were not stuffed into the hens (separate them into pieces).

Baste the hens fully and place them with breasts up in the baking pan.  Cook on 425 degrees for 30 minutes.

Lower the heat to 350 and cook an additional 20 minutes.  When an instant read thermometer inserted into the thickest part of the thigh  reads 165 degrees remove the pan from the oven.

Allow the hens to rest for 15 minutes before serving. Reserve the flavorful pan juices to drizzle over the hens when serving.

Because we adhere to kosher guidelines as often as possible, you'll only find recipes here that contain beef and poultry, no pork.

In a medium mixing bowl combine water, orange juice, sugar, salt and spices. Whisk to combine thoroughly.

Rinse hens and trim off any excess fat or skin (do not remove all of the skin, only extra hanging pieces). Place them in gallon sized resealable storage bags (2 to a bag) and divide the brine evenly between the two. The spices may settle in the liquid, so give it a swirl as you're pouring it in.

Squeeze all the air out of the bags and place in a baking dish to prevent any liquid from leaking. Marinate in the refrigerator overnight.

When you are ready to cook the hens, preheat your oven to 400 degrees F.Place the hens in a roasting pan and reserve the marinade. Tuck an orange quarter inside of each hen, then truss with twine (simply wrap the drumstick ends together and secure with twine).

Brush each hen with 1/2 tbsp of olive oil.

Season with salt and pepper. I use about 1/4 tsp of each per hen. Roast the hens for 90 minutes, turning the roasting pan halfway through cooking to ensure even heat distribution.

Meanwhile, strain the remaining marinade into a medium saucepan and bring to a boil over high heat.

Reduce heat to a a simmer and cook, letting the liquid slowly reduce until the the mixture is the consistency of a barbecue sauce.

Once 90 minutes have passed, remove the hens from the oven and brush them with a generous amount of the sauce.&nbsp;

Return to the oven for an additional 15 minutes, or until the hens reach an internal temperature of 170 degrees F. Serve hot.

Preheat oven to 400°F.

Slice the lemon and onion, and place in the bottom of a 13X9 baking dish. Add the garlic, rosemary stems, and thyme stems.  Set aside while you prepare the hens.

Remove the hens from the packaging, and pat dry with paper towels.

Tie the legs of the hens together using kitchen twine.

Rub 1 tablespoon of olive oil on each hen. Using your hands, rub generously all over the hen.

In a small bowl, combine the Italian seasoning, garlic powder, dried herbs, and salt and pepper. Sprinkle liberally all over the hens.

Place the hens on top of the lemons and onions in the prepared dish.

Bake for about 45 minutes, or until the internal temperature reads 165°F. If the skin of the hens starts to darken, you can cover them with foil.

Allow the hens to rest for 5 minutes before serving.  To serve, cut hens in half.  Each hen will serve 2 people.  Serve with pan drippings, delicious sides, and fresh lemon and herbs to garnish.

Preheat oven to 400 degrees.

In a small saucepan, melt the butter and saute the shallots over medium heat until translucent, about 5 minutes. Add the apricot preserves, Dijon mustard, and soy sauce and simmer until thick, about 10 minutes. Season with salt and pepper and set aside to cool.

Season the game hens liberally with salt and pepper. Using a basting brush, paint each bird entirely with the glaze.

Place the glazed birds in a roasting pan, breast side up. Roast for 20 minutes, uncovered, and then reglaze the birds. Repeat this process twice more, every 15 minutes, at 35 and 50 minutes. If the hens are turning too brown, lightly tent the roasting pan with foil to protect them. After 60 minutes, check with an instant-read thermometer; the thighs must register at 165 degrees F, the breasts at 170. Let rest for 10 minutes and serve.

Slow Cooker Cornish Game Hens and Baked Potatoes

NOTE - THE GAME HENS NEED TO BE THAWED COMPLETELY. This takes about 36 hours in the fridge.

Remove the game hens from their packaging. Rinse them under cold water to remove any debris from their insides and any stuck pieces of ice.

Pat the game hens dry with paper towels.

Add the game hens breast up to the slow cooker.

Squeeze the lemon over the game hens.

Sprinkle them with the 1 teaspoon of salt, 1/4 teaspoon of pepper, paprika and basil. Be sure to sprinkle the paprika over evenly, this will keep the hens from looking pale after cooking.

Add the russet potatoes on top, I tuck the potatoes in the empty spaces around the chicken. (no need to pierce the potaotes with a fork)

Drizzle the olive oil over the potatoes. Sprinkle the potatoes with a touch of salt and pepper.

Place the lid on the slow cooker.

Cook for 7 hours on low. DO NOT OPEN THE LID DURING THE COOKING TIME. Check to see if the chicken is cooked through and the potatoes are tender before serving. Cook for an additional hour if your potatoes aren&#39;t tender, for every slow cooker cooks slightly different.
