Fudgy Courgette Brownies

300 g Grated Courgette (roughly 1 medium courgette.)

200 g Dark Chocolate (70% cocoa solids)

150 g Unsalted Butter

Eggs (large)

g Caster Sugar

g Light Brown Sugar

tbsp Vanilla Extract

140 g Plain Flour

tbsp Cocoa Powder

tsp Baking Powder

g Milk Chocolate Chips

Preheat the oven to 180°c (160 fan/ Gas 4/ 350F) and line a 30 x 20 cm brownie tin with baking paper.

Place the grated courgettes in a sieve above the sink to let any excess water drip out.

Melt the butter and chocolate in the microwave. I microwave for 20 seconds at a time and then stir the mixture. This ensures the chocolate doesn&#039;t burn or seize. Leave to cool.

In another bowl, whisk the eggs and sugars together for 2-3 minutes (using an electric whisk). You want the mixture to be pale and fluffy.

Mix the cooled melted chocolate mixture into the whisked eggs and sugar.

Stir in the grated courgette and vanilla extract.

Fold in the flour, cocoa powder, baking powder, and chocolate chips. make sure everything is well mixed.

Spoon the mixture into the baking tin and bake for 30 minutes. Cool completely before cutting and serving.

Zucchini Courgette Brownies with Pecans (vegan)

(110 milliliters) vegetable oil

(250 grams) granulated sugar

tsp vanilla extract

(250 grams) all-purpose (plain) flour

(65 grams) unsweetened cocoa powder

tsp baking soda

tsp salt

(325 grams) finely shredded zucchini ((don’t squeeze

(100 grams) semi-sweet chocolate chips (or chopped dark chocolate)

(55 grams) pecans, roughly chopped ((optional))

Preheat oven to 350°F and line a 9x13 &quot; (23x33cm) pan with baking paper (or grease with cooking spray).

Add the oil, sugar, and vanilla to a large mixing bowl and beat (by hand or with an electric mixer) until combined and sandy.

Stir in the flour, cocoa powder, baking soda, and salt. The mixture will be thick and quite dry, but don’t panic, the courgette/zucchini will moisten it.

Gently stir in the shredded zucchini (courgette). Do not use an electric mixer for this part.

Set the mixture aside for 5 minutes to rest and let the courgette’s juices release into the batter.

Gently fold in the chocolate chips and pecans.

Note: Older zucchinis are drier, so at this stage check the batter and if it is still very thick, then gently stir in a little water (up to 3 tbsp, one tablespoon at a time), or leave the mixture to rest for a few more minutes.

Pour the batter into the pan and spread evenly to the edges. Cook for 25 minutes or until the edges are set and the centre is still a little bit wobbly and soft.

Allow the courgette brownies to cool completely in the tray before cutting into squares.
