This homemade Cowboy Butter is so delicious on grilled chicken and steak, but also garlic bread, chicken bites, roasted turkey, chicken wings, and so much more!

Cowboy Butter

salted butter ((2 sticks))

parsley

red pepper flakes

black pepper

garlic (finely minced)

juice and zest of ½ lemon

Allow the butter to come to room temperature before starting.

Into the bowl of a mixer fitted with a paddle attachment, add the room temperature butter.

Beat the butter until creamy, then add in the parsley, red pepper flakes, black pepper, minced garlic, lemon juice and zest.

Mix until well combined.

Scrape down the sides of the bowl and turn the mixture out onto a piece of parchment paper.

Using the back of a spatula, spread out the mixture into a log shape.

Roll the parchment paper up and twist the ends like a piece of candy.

Refrigerate the log of butter for at least 4 hours to allow the flavors to come together.

Cowboy Butter is flavored butter that can be used as a dipping sauce or formed into a log to use as a spread.

(1 stick / 113 g) unsalted butter, (melted)

Dijon Mustard

chives, (chopped)

parsley, (chopped)

lemon juice

thyme, (minced)

garlic, (minced)

paprika

salt

pepper

cayenne pepper

Whisk together all ingredients.

In a medium bowl, add the melted butter, dijon mustard, chives, parsley, lemon juice, thyme, garlic, paprika, salt, pepper, cayenne, and red pepper flakes. Whisk together until combined. This will make about ⅔ cup of butter. (You could also mix the ingredients in a food processor.)

Store in the refrigerator.

Store in the refrigerator in an airtight container for up to 5 days.

Place the softened butter in a large mixing bowl and beat with an electric mixer until fluffy. Add the parsley, garlic, finely minced lemon zest, red pepper flakes, and black pepper. Squeeze one lemon half into the bowl (about 2 tablespoons). Beat again until well combined.

Transfer the butter to an airtight container and refrigerate until firm, at least 2 hours. When ready to use, scoop the firm butter over hot steaks. If you have any butter leftover, it&#39;s delicious on bread or tossed with hot vegetables.

Cowboy Butter for Steak

Unsalted Butter, (softened (see notes))

tbsp very finely diced Fresh Parsley

tbsp very finely diced Fresh Chives

tsp (not tbsp!) very finely diced Fresh Thyme Leaves

Garlic, (finely grated/minced)

Lemon

tsp Smoked Paprika

Worcestershire Sauce

tsp Chilli Flakes, (or to spice preference)

tsp Salt, (or to taste)

2x 220 grams/8 ounces Sirloin Steaks, (at room temp)

tbsp Vegetable Oil

Salt & Black Pepper, (as needed)

Combine all of the cowboy butter ingredients in a small mixing bowl.

Pat the steaks dry then generously season both sides with salt and pepper. Add a large cast-iron or heavy-based pan over high heat. Once the pan is very hot, add the oil and leave for 5-10 seconds. For medium-rare, add the steaks and leave undisturbed for 2 minutes. Flip them over and fry for 2 minutes, then remove and rest them to one side for 5 minutes.

Serve the steak with your desired amount of butter and enjoy!
