Candied Jalapenos are the perfect combination of sweet and spicy!

Remove and discard stems from peppers, then slice into 1/4&quot; slices.  Set pepper slices aside.

To a large pot, add cider vinegar, white sugar, garlic powder, turmeric, and celery seed and bring to a boil. Reduce heat to about MED LOW and simmer for 5 minutes.

Raise the heat to about MED HIGH to bring mixture back to a boil.  Once boiling, add the pepper slices.  Allow to return to a boil, then reduce the heat again (to about MED LOW) and simmer for 4 minutes.

Transfer the peppers using a slotted spoon to clean glass canning jars, filling jars to within 1/4 inch of the upper rim of the jar.

Only the syrup should remain in the pot at this point.  Increase the heat to bring to a full rolling boil.  Boil like that for approximately 6 minutes.

Ladle the syrup into the jars with the jalapeno slices.  If you notice any air pockets, take a clean spoon and insert it into the jar to get rid of the trapped air.  Fill jars to within 1/4-1/2&quot; from the upper rim of the jar.

Wipe the rims of the jars with a damp paper towel, then screw on canning jar lids.  Label if desired and refrigerate for at least 1-2 weeks (3-4 weeks for optimal flavor).  Candied jalapenos are good for up to 3 months if kept properly refrigerated.

Wearing gloves, slice and discard stems from peppers, then slice into 1/4-inch thick rounds. Transfer to a bowl and set aside.

In a large pot over high heat add all the other ingredients. Bring to a boil, then reduce the heat to a gentle simmer for about 5 minutes.

Add in the sliced jalapeños, bring the heat back up to high and simmer for exactly 4 minutes.

With a slotted spoon, transfer the peppers to clean, sterile canning jars to within a 1/4-inch of the upper rim of the jar.

Put the heat back on under the pot to high and boil the liquid for about 6-7 minutes. Then remove pot from the heat and let cool for about 3 minutes.

Using a ladle (or pitcher with a spout), carefully pour the liquid syrup into the jars, making sure all the jalapeños are completely submerged. (Take a chopstick and poke it into the bottom of the jars a few times to release any pockets of air.)

Wipe the rims of the jars with a clean, damp paper towel. Seal with two-piece lids. Place in the fridge.

Let chill for at least 2 weeks (preferably a month.) The longer they sit, the better they will taste.

Keep stored in the fridge and eat within 2 months. (For canning info, see notes below.)

How to Can Candied Jalapenos

Wash and drain peppers. Wear gloves to cut up this quantity of peppers!! Cut into 1/8 - 1/4&quot; slices.

Add the vinegar, sugar and spices to a large stock pot.

Bring to a boil. Then reduce heat and simmer for about 5 minutes.

Add the peppers and simmer for 4 minutes.

Use a slotted spoon to load jalapenos into washed and sterilized jars. Leave 1/4 inch head space. 

Once peppers are loaded into jars, turn heat up under the syrup again and boil hard for 6 more minutes.

Ladle additional syrup over top of peppers in jars, leaving the head space.&nbsp;

Wipe edges of jars.

Place lids and bands on jars. Finger-tip tighten.

DO NOT throw out the the remaining syrup! Place it in a jar and use it in a variety ways! Aioli, brush it on meat, fish and poultry try it in cole slaw and potato or macaroni salads! Anything you can think of!

Place the jars in the canner with hot water in it. Bring to a full rolling boil. Boil for 10 minutes for half pints, 15 minutes for pints. Turn off burner and let stand in hot water for 5 more minutes. Then remove and leave stand on counter overnight.

The next day check for seal. If center of lid flexes up and down, they must be stored in the refrigerator. Place sealed jars in a cool, dry place.

Try to resist the temptation to open them for at least 2 months! I like waiting 3 for the flavors to develop! In the meantime, console yourself with the syrup!!

A small batch, homemade cowboy candy recipe that you can enjoy as a condiment for sandwiches but also as a topping for cheese and crackers and cream cheese. An easy, no canning required recipe.

Slice jalapenos into rounds.  Remove the seeds if you don't want them extra spicy.  If you want them extra spicy leave the seeds. I would suggest wearing gloves during this part.

Place jalapenos in a small sauce pan.

Add water and sugar.

Cook over medium/high heat until boiling.

Reduce temperature and simmer until the liquid has reduced and looks like syrup, stirring occasionally.  This takes approximately 30 minutes to 1 hour.

Let cool and place in jar.

Store in refrigerator.

THANK YOU! I had made these before and loved them, but every recipe I was finding this time was for “cowboy candy”, which is NOT the same!  I love this stuff.

I haven't made this yet but I know I'm going to love it.  I will chop some up in cornbread along with grated cheddar cheese.  Yum!

I made this with some seeds, but not all. First served it with baked Brie, strawberry preserves and the jalapeños.  Everyone loved it! Very nice! Used candy thermometer to watch temp. Syrup at 230 and pulled it off. Perfect. Took about 45 mins for 2 1/2 cups of jalapenos, 1 C sugar and 1/2 cup of water. Final yield, about 1/2 cup of finished product.

3 Ingredient Candied Jalapenos

This cowboy candy recipe is the perfect blend of sweet &amp; spicy, but without the worry of excessive sugar! Easily water bath can them to be shelf-stable.

Easy Cowboy Candy Recipe (Candied Jalapeños) - Lower Sugar, Water Bath Canned

honey*

cane sugar

apple cider vinegar (or white vinegar)

garlic garlic

salt, (optional)

cayenne powder, (optional)

Prepare a water bath canner, wash and keep warm 8 half-pint canning jars, lids and rings. Slice jalapeños (remember to wear gloves).

Combine the honey, sugar, vinegar, and seasonings in a large saucepan. Bring to a boil over high heat, stirring often. Reduce heat to medium and simmer for 10-15 minuted, until slightly thickened.

Add the sliced jalapeños to the syrup and simmer another 5 minutes. It should steam and bubble a bit, but not boil hard again.

Ladle the hot peppers and syrup into one hot jar at a time, leaving a 1/2 inch headspace. Use a non-metal spatula or chopstick to remove air bubbles and wipe the rim with a damp cloth. Attach lids and rings and place in rack of canner. Repeat with remaining jars.

Lower rack and bring canner to a boil over high heat then start timing 15 minutes to process the jars (adjusting for altitude). Once timer goes off, remove the lid, turn off heat and let jars sit in canner for 5 minutes.

Remove the jars to a towel-lined surface (Tip: a tray with a towel allows for them to be moved if needed) and let cool 12-24 hours without disturbing.

Remove the rings and check lids for sealing - refrigerate any that don&#39;t seal (rare!) - and then label and store for up to 18 months. If you can wait  2-4 weeks before opening, that will be the best flavor!
