How To Make Cowboy Caviar - Easy And Delicious

black beans

rotel tomatoes

brown rice

diced bell pepper

cilantro

red onion

corn kernels (use fresh or thaw from frozen)

avocado,

olive oil (extra virgin)

lime juice

maple syrup

tsp chili powder

tsp cumin

salt and pepper

In a large mixing bowl stir together all of the salad ingredients and mix well.

In a small mason jar, add the dressing ingredients, screw on the lid and shake really well to emulsify.

Pour the dressing over the salad ingredients and toss to coat.

Cover and refrigerate for 30 minutes for flavours to develop. Serve cold.

Store covered in the fridge for up to four days.

lime

garlic (minced (or frozen cubes))

honey (4 g)

chipotle chili powder

cumin

Tbsp. red wine vinegar (15 g)
