A fresh, simple, healthy black bean salad with a South West lime dressing, this is endlessly versatile and lasts for days. Serve it as a side, stuff it in tacos, burritos and wraps. Pile onto burritos and tacos, take it to work for lunch! {Quantity: Written recipe scaled down to use 1 can of each beans and corn, pictures and video show double batch}

Cowboy Bean Salad

400 grams/14 oz can black beans (, rinsed & drained (Note 1))

400 grams/14 oz can corn (, drained (or frozen thawed 1.5 cups))

red capsicum/bell pepper (, 1cm/1/3" diced)

avocado (, diced)

red onion (, diced)

coriander/cilantro (, roughly chopped)

cherry tomatoes

lime juice

olive oil

tsp chipotle powder ((or American Chili Powder, Note 3))

cumin powder

tsp sugar

garlic (, finely ninced)

tsp black pepper

tsp salt

Shake Dressing in a jar.

Place Salad ingredients in a big bowl. Drizzle over Dressing, toss.

Serve immediately, or keep for up to 4 days! Might need a squeeze of lime to freshen the flavour.

Serve as a light meal or side (goes with everything - beef, fish, prawns, pork, chicken). Especially great with all things Mexican – stuff in / pile on tacos, burritos, enchiladas, nachos, fajitas - and Southern Foods (pulled pork, barbcue ribs, fried chicken!)

Crisp colourful veggies and beans are tossed together with some serious flavour from Jalapeño peppers, lime, cilantro and cumin!

Santa Fe Salad

(19 ounces) can black beans (rinsed and drained)

red bell pepper (diced)

red onion

(12 ounces) kernel corn (I used fresh cooked corn from cob)

jalapeño pepper (seeded and finely diced)

In small jar mix together oil and lime juice.

Add cilantro, cumin, salt and pepper and shake well.

Mix together black beans, red pepper, onion, corn and jalapeño pepper.

Toss together dressing and salad ingredients.

Perfectly serve Cowboy Caviar as a side dish and or as an appetizer. The easiest and most simple dip to make in 15-20 minutes. Every bite includes a sharp sweet flavor.

black-eyed peas

sweet corn

cilantro (chopped)

red bell pepper (chopped

orange bell pepper (chopped

red onions (diced)

chili powder

kosher salt

sugar

white wine vinegar

garlic powder

Drain and rinse the beans

Drain, rinse and pat dry the beans and corn. Transfer to a large bowl. 

Add the ingredients

Add the cilantro and the remaining ingredients to the beans and corn mixture. Stir to combine.

Serve and enjoy!

This recipe has now become a staple in my home for small gatherings. This cowboy caviar or Texas caviar has been requested so much; I can now make it with my eyes closed.

The acidic flavors from the lime and the white wine vinegar, along with the sugar, gave this side dish a savory sweet richness.
It is a simple recipe that can be made quickly or ahead of time.
