Sweet dried cranberries, crunchy walnuts, tangy goat cheese and baby spinach tossed in a light honey balsamic vinaigrette dressing.

Cranberry Goat Cheese Salad with Walnuts

baby spinach (roughly an 8 ounce bag of store bought)

goat cheese (crumbled (like chevre))

cranberries (sweetened)

walnuts (raw, roughly chopped)

shallot (finely minced (about 2 tablespoons))

vegetable oil (can use grapeseed

balsamic vinegar

tbsp honey

salt and pepper (optional)

Whisk together oil, vinegar, honey, minced shallot, and salt and pepper (optional).

Wash and dry or spin lettuces. Add to salad bowl.

Toss gently with cranberries and walnuts.

Pour enough dressing around the outside of the bowl (not on the salad) enough to coat the outside of the bowl. Toss salad and taste to see if you need to add more. Repeat until salad is dressed enough. Save excess salad dressing for up to two weeks.

Crumble cheese over salad, toss gently to combine.

Berry Spinach Salad with Blueberries and Raspberries

honey (or brown sugar)

oz baby spinach (fresh)

blueberries

raspberries

mandarin oranges

feta cheese (crumbled)

pecans (toasted, some of them chopped)

In a small saucepan, heat balsamic vinegar and honey over medium heat. 

Bring to a gentle boil, reduce heat to simmer and cook, stirring, until the mixture thickens and reduces by about half (about 10 or so minutes).

Remove from heat and pour the balsamic glaze into a heat-proof bowl to cool off.  The glaze will get thicker as it cools off.

Consistency should be thick enough to coat the back of the spoon but should not be overly thick.

Salad Dressing - Balsamic Glaze

For the best presentation, divide the spinach into individual large salad bowls.

Top each individual bowl with the rest of the salad ingredients.

Drizzle with the salad dressing.

Alternatively, In a large bowl, combine all of the salad ingredients, except the pecans. Toss to combine. Divide the salad into individual serving bowls. Top each serving bowl with whole and chopped toasted pecans. Drizzle the top of the salad in each bowl with balsamic glaze.
