This is the BEST corn casserole you have ever had!&nbsp; It is rich, creamy, cheesy and super delicious.&nbsp; The secret is the Jiffy corn muffin mix and the sour cream swirl at the end!

Jiffy Corn Casserole

butter (melted)

box Jiffy Corn Muffin Mix

corn (not drained)

creamed corn

oz cheddar cheese (shredded (about 2 cups))

sour cream

Preheat the oven to 350˚F.

In a large casserole dish, add the melted butter, Jiffy mix, corn, creamed corn, egg, and half of the cheddar cheese (about 1 cup.) Mix until everything is combined.

Dollop the sour cream evenly over the top, then use a knife to gently swirl it into the casserole. Sprinkle the remaining cheese over the top.

Bake on the middle rack in the oven for 40-45 minutes or until the middle is set (cooked through.) Remove from the oven and serve warm.  Enjoy!

Cream Corn Casserole with Cream Cheese

(16 ounce) cans whole kernel corn, strained

unsalted butter, separated

yellow onion, finely diced

heavy cream

(8 ounce) package cream cheese, softened

egg, slightly beaten

sugar

salt

black pepper

Ritz crackers (about 15 crackers)

Preheat the oven to 325° and have ready a greased, 2-quart casserole dish or baker.&nbsp;

Place half of the strained corn into a blender or food processor. Pulse until the corn kernels are broken up. Set aside until ready to use.&nbsp;

Add 4 tablespoons of the butter to a large saucepan over medium heat. Do not allow the butter to burn. Add the onion and sauté, stirring often, just until softened -- about 5 minutes.&nbsp;

Add the heavy cream&nbsp;and softened cream cheese to the saucepan, and stir until the ingredients have melded and remove from the heat.

Add the egg, sugar, salt, pepper, and all of the corn to the saucepan and stir to combine. Transfer contents of the saucepan to the prepared dish.

In a microwave-safe bowl, melt the remaining 2 tablespoons of butter. Add the crushed crackers, and stir to combine.&nbsp;

Sprinkle the cheese evenly over the corn mixture and top with the crushed crackers. Cover with aluminum foil and bake for 30 minutes. Uncover, and bake for an additional 15 minutes. Allow to cool slightly, serve, and enjoy.

Preheat the oven to 350℉. Spray a 9 X 9-inch pan with cooking spray. If you want a slightly thicker casserole, you can use an 8X8 pan; you may need to increase the cook time by 5 or 10 minutes.

To a large bowl, add 2 eggs and whisk together until beaten. Add in flour, melted butter, salt, pepper, sugar, and whole milk. Combine until smooth.

Add in cream corn and stir until incorporated.

Pour into prepared baking dish and bake for 40 - 45 minutes. Stirring the mixture about 20 minutes (halfway) into the baking time.

Remove from the oven and let sit for a few minutes. Garnish with fresh parsley and serve.
