Deliciously saucy and creamy beans loaded onto crunchy bread. 

CREAMY HARISSA BEANS ON TOAST

olive oil

red onion, finely diced

garlic

butter beans

tomato paste

tsp harissa spice

oregano

cream

lemon

basil

crusty bread of your choice, toasted

Saute the onion in olive oil for 5-7 minutes so it starts to become caramelised. Add the garlic and tomato paste and cook for another minute.

Add the can of beans along with their liquid and use that to deglaze the pan. Stir through the harissa, oregano and cream and let simmer for another 5-10 minutes (depending on how much time you have).

While the beans are simmering, toast your bread.

Stir through the fresh lemon and serve topped with basil.

These flavorful creamy beans in a white wine and sundried tomato sauce are an easy vegetarian dinner or side dish! This recipe works with any type of beans: white beans, borlotti beans or kidney beans are all good choices. Serve with bread, sweet potatoes or grains for a simple meal.

Creamy "Marry Me" Bean Bake

shallots (sliced)

tomatoes

tsp red pepper or chili flakes

sage

thyme

tsp smoked paprika

white wine

vegetable stock

oz canned beans (drained)

heavy (double) cream

parmesan, pecorino cheese (grated)

baby spinach (chopped)

basil (chopped)

mozzarella (for topping)

Preheat the oven to 220C / 450F.

Heat a couple spoonfuls of the oil from the jar of sundried tomatoes in a cast iron skillet (or any pan that can go between the stove and the oven) over a low-medium heat.Saute the shallots until soft, then add the garlic and saute until just fragrant.

Add the sundried tomatoes, red pepper flakes, sage, thyme and smoked paprika. Saute until the herbs are fragrant.

Add the white wine and let it bubble for a few minutes until the harshest alcohol smell has passed and the amount is reducing a little.

Add the cream and cheese, stir through until the cheese has melted and a sauce has formed. Add salt and pepper to taste.

Add the beans, spinach and basil, and mix through the sauce. Assess the thickness of the sauce and add in the vegetable stock until it is fairly runny (a little runnier than you would like - it will thicken up in the oven). You may need a little more or less stock than the recipe states depending on how much your wine cooked down, and how thick your cream is.

Sprinkle mozzarella over the top and bake for 15 minutes, until bubbling and crisp. Allow it to rest for 5 minutes and then serve.

Clean the beans by passing them through your hands and picking out small rocks and dried-up or broken beans.

Then, begin by rinsing the dried Mayocoba beans thoroughly. Soak them in water overnight (optional). This step reduces the cooking time.

Soak the Beans: 

Drain the soaked beans and add them to a large pot. Add the water, lard, onion, and garlic, and bring the mixture to a boil.

Once boiling, reduce the heat to low and let the beans simmer for about 1.5 to 2 hours or until they are tender and creamy. Stir occasionally. Add more water as needed during cooking to ensure the beans remain submerged.

After the beans are tender, season them with salt. Taste and adjust the seasoning as needed. 

Just before serving, garnish with the crumbled queso fresco.

Cook the Beans:

Mayacoba beans cook well in a pressure cooker or Instant Pot. They typically take 20–30 minutes under pressure, and you don’t need to soak them.

I had never heard of mayacoba beans before, but I followed your cooking method for them tonight and they were wonderful! We used them for tostadas, and they were so creamy. I'll definitely be making these again in the future!

Creamy refried black beans are the ideal side dish for any Tex-Mex dinner.  Loaded with garlic and a hint of heat, these are sure to be a hit!

Creamy Canned Refried Black Beans

unsalted butter

white onion*

garlic (minced)

cumin

cayenne

sour cream ((or greek yogurt))

hot sauce ((like cholula))

Melt butter in a small sauce pan over medium heat.

Add onion, cook 3-4 minutes until tender.  Add the garlic and cook another minute until tender and fragrant.

Add beans, and mix thoroughly with the onion and garlic.  Stir until smooth, then add the cumin and cayenne.  Stir to mix.

Stir in the sour cream and hot sauce (optional) until fully combined.

Top with green onions, or any combination of tomatoes, white onions, jalapeños, cheese, etc.

Serve hot!

First let me say that I liked this recipe, enjoyed and will make again. I am trying to eat low/no sodium &amp; high protein. This refried bean recipe fits the bill &amp; provides great flavor. I used low sodium pinto beans.  I wasn’t totally pleased with the texture also I wasn’t happy with the color after adding the sour cream. Next time I make (probably next week) because I enjoyed so much, I will use my immersion blender or a potato masher to mash the beans, and I’ll save the sour cream for a condiment. These are just personal preferences, this is a solid, easy, good recipe! I’m going to use the leftovers on burritos. Maybe color would have been fine if I had used black beans instead of pinto?? Oh also it would be helpful if the recipe stated whether beans should be drained and rinsed or not.
