In a large deep fry pan, heat 1 tablespoon of olive oil, then add the sliced mushrooms, and fry on low to medium heat, until the mushrooms change colour and become soft, this will take about 3-5 minutes.

When done, transfer the cooked mushrooms and any juice you get from them to a bowl, and put aside for later.

In the same pan cook the meat in two batches: Heat 1 tablespoon of olive oil, add quarter of the thinly cut gravy beef and fry until brown all over. Transfer the meat and juices to a plate. Repeat for the remaining meat.

Add a little more oil (about 1/2 teaspoon) to the fry pan. Add the sliced onions and garlic. Fry for 2 -3 minutes, or until the onions become soft.

Return all the browned meat and its juices to the pan with the onions. Add the red wine, water and 2 tablespoons of soy sauce and stock powder, bring to the boil, cover with a lid, then reduce the heat.

Allow meat to simmer for about 1 hour, or until the meat is soft and tender.

Once the meat is tender and soft, stir in the cooked mushrooms, fresh cream, and sour cream to the meat. Gently simmer for about 5 minutes, taste for salt – adding the remaining soy sauce and a little salt if needed. Season with freshly ground pepper.

If you think the sauce is too thin and would like a thicker sauce, you can mix 2 teaspoons of cornflour with a little water and slowly pour and stir this into the Stroganoff, allow to cook for a minute on medium to low heat until the sauce thickens.

onion, finely chopped

garlic clove, minced

flour

heavy whipping cream

Worcestershire sauce

Dijon mustard

salt

black pepper

green onion

oz egg noodles (optional, to serve)

1-Getting Started with Mise en Place

Start by gathering and prepping your ingredients to make this Beef Stroganoff Recipe a breeze. Slice 1 lb of top sirloin steak into thin strips, measure out 1/2 lb of brown mushrooms, chop 1/2 cup of onion, mince 1 garlic clove, and get 1 cup of beef broth ready. This setup helps the cooking flow smoothly and ensures you don’t miss a beat, especially on busy nights.

Begin with a large pan or Dutch oven heated over medium-high heat. Add 2 tablespoons of oil, then sear the beef strips in batches for 1 minute per side until browned. Set it aside to stay warm while you move on.

3-Building the Flavor Base

Next, add 2 tablespoons of unsalted butter to the pan along with the chopped onions and sliced mushrooms. Sauté for 6-8 minutes until the veggies soften and any liquids evaporate. This step brings out the rich flavors that make this Beef Stroganoff Recipe so comforting.

Stir in the minced garlic and cook for 1 minute, then add 1 tablespoon of flour and mix constantly for another minute. Pour in 1 cup of beef broth and scrape up those tasty browned bits from the bottom of the pan.

5-Creating the Creamy Sauce

Add 3/4 cup of heavy whipping cream and simmer for 1-2 minutes until it thickens a bit. To avoid curdling, mix a few tablespoons of the sauce into 1/4 cup of sour cream first, then stir it back in. For more tips on adding sour cream, check out this helpful advice from fellow cooks.

Stir in 1 tablespoon of Worcestershire sauce, 1/2 teaspoon of Dijon mustard, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Let it simmer until the sauce turns creamy and smooth.

7-Finishing and Serving

Return the beef to the pan and warm it through gently. Serve it up with a garnish of 1 tablespoon of green onion or parsley, and if you like, ladle it over 8-12 oz of cooked egg noodles. The whole process takes about 30 minutes, making it a quick win.
