Chopped chicken plus sautéed corn and zucchini tossed in a cheesy cream sauce, combine to make a delicious chicken zucchini casserole!

Cheesy Chicken Zucchini Casserole

½ pounds boneless, skinless chicken breasts, (cut into bite-sized pieces)

zucchini,

red bell pepper, (diced)

garlic, (minced)

corn kernels,

all-purpose flour

chicken broth

half and half

cream cheese, (room temperature, cut up in cubes)

mozzarella cheese, (divided)

salt, (or to taste)

black pepper, (to taste)

chopped fresh parsley, (for garnish)

Preheat oven to 400˚F.

Lightly grease a 9x13 baking dish with cooking spray and set aside.

Add olive oil to a 12-inch skillet and set over medium-high heat. Add diced chicken to the pan; cook, stirring occasionally, for about 8 minutes, or until chicken is browned and cooked through. Transfer the chicken to a medium mixing bowl and set aside.

Add zucchini and bell peppers to the pan; cook, stirring occasionally, for about 4 minutes, or until the vegetables are just tender. Add garlic and cook for 20 seconds. Stir in corn and cook for 1 minute, or until heated through. Transfer the zucchini mixture to the bowl with the chicken. Set aside.

Add butter to the same pan and melt. Stir in flour; cook, stirring constantly, until the flour starts to brown, about 1 minute. Whisk in broth and half &amp; half;  bring to a boil, whisking often.

Remove from heat; stir in cream cheese and 3/4 cup mozzarella; continue to whisk and stir until melted. Season with salt and pepper.

Drain liquid from the chicken and vegetable mixture. Stir the chicken and vegetables into the cheese sauce. Transfer chicken and veggies to previously prepared baking dish.

Sprinkle the casserole with the remaining mozzarella cheese. Bake for 22 to 25 minutes, or until edges are bubbly and top is browned. Remove from oven and let stand 10 minutes.

Taste for salt and pepper; adjust accordingly.

Garnish with parsley and serve.

Creamy Chicken Casserole

lbs chicken breasts (about 3 breasts)

eggs

milk

½ tsp table salt

flour mixture-

Tbsp ground paprika

¼ tsp ground pepper

¾ tsp table salt

26 oz cream of chicken soup can, family size

sour cream

water

tsp table salt

¼ tsp ground paprika

¼ tsp ground black pepper

oz bacon, 1/2 pack, cooked

oz mushrooms,

oz four cheese or mozzarella

Cut chicken breast into medium pieces (About 6-7 pieces per chicken).&nbsp;

Prepare the marinade. Combine the milk, eggs and salt. Place the chicken pieces into the mixture and let marinade 4 hours (or overnight).The longer it marinades, the softer the chicken will become.

Combine the ingredients for the flour mixture; the flour, paprika, pepper and salt.

Take the chicken from the marinade and coat generously in the flour mixture. (Discard of the marinade.)

Add enough oil to the skillet to completely cover the bottom of the skillet, turn on med/high heat. Once the oil is hot, fry 6-8 minutes, until chicken is crispy, turning as needed. Don't crowd the skillet. (Using two skillets works quicker.)

While chicken is frying prepare the cream mixture; combine cream of chicken soup, sour cream, water, salt, paprika and pepper.

Once chicken cooks, transfer onto a plate lined with paper towel.&nbsp;

Cover the bottom of a 9"x13" dish with some of the cream.

Add the chicken pieces to the casserole dish.&nbsp;

Completely cover with the remaining cream. (If preparing the night before and will be cooking it the following day, wait for the chicken to cool before covering with the cream.)

Add half of the cheese. Add the cooked bacon and sauteed mushrooms. Sprinkle remaining cheese.&nbsp;

Bake 350° for 30 minutes, covered with foil. Remove foil and continue baking another 15-20 minutes until cheese melts and cream bubbles everywhere.&nbsp;

This chicken casserole isn&#039;t complete without the crisp crumbled Ritz crackers on top for the perfect creamy-crunch ratio.

Million Dollar Chicken Casserole

chicken (cooked chicken breasts)

oz cream cheese (softened

cottage cheese

10.75 oz cream of chicken soup

garlic powder

onion powder

Ritz crackers (1 sleeve)

Tbsp unsalted butter (melted)

Preheat the oven to 350F.

Shred the cooked chicken into bite-sized pieces.

In a large bowl combine the cream cheese, cottage cheese, sour cream, cream of chicken soup, and seasoning. Mix well.

To the same bowl add the chicken and stir to coat well. Pour into a 9x9 casserole dish.

In a separate medium bowl add a sleeve of Ritz crackers and crush into small bits. Pour in the melted butter and toss to coat the crackers.

Top the casserole with the Ritz crackers.

Bake uncovered for 40 minutes. Garnish with parsley if desired.
