Creamy Chicken Orzo

olive oil

Heat the olive oil in a large pot over medium heat

Add the onion, celery and carrots and cook until the onion is translucent, about 7 minutes

Add garlic and sauté for 2 minutes longer.Add the chicken stock and bring to a boil.Add the cooked, shredded chicken breast along with the orzo.Reduce the heat to medium

Maintain a simmer for 20 minutes, until the orzo is cooked through, the veggies are tender, and most of the liquid has been absorbed by the orzo.

This lemon chicken orzo recipe is creamy, comforting, made in one pot (for fewer dishes!), and comes together in about 30 minutes.

Lemon Chicken Orzo

Add the oil, butter, and onion to a pot over medium-high heat. Sauté the onion for 3-4 minutes.

Add the garlic, Italian seasoning, and orzo. Cook for 2-3 minutes, stirring often (this infuses the orzo with more flavor and toasts it a little).

Stir in the chicken broth, lemon juice, and cream. Once it starts to bubble, continue cooking for 10 minutes, uncovered, stirring fairly often. You will probably need to turn the heat down a bit (to medium or even medium-low). It should gently bubble vs. furiously boil, and you don&#039;t want the liquid to reduce too much before the pasta has cooked. See notes below for troubleshooting tips.

Stir in the chicken.

Take the pot off the heat, stir in the parmesan and spinach, and cover the pot for 3-5 minutes or until it has thickened up to your liking. Season with salt &amp; pepper as needed and serve immediately.

Creamy Tomato Chicken Risoni (also known as Orzo) is the perfect quick and easy weeknight dinner, all made in the one pan with maximum flavour! The chicken is seasoned in a flavour-packed seasoning before being topped on perfectly cooked, creamy risoni that takes on a risotto-like texture, all with minimal prep and minimal washing up!

Creamy Tomato Chicken Risoni (Orzo)

chicken breasts, halved lengthways to make 4 schnitzels

tsp garlic, freshly minced

Italian herb mix (or substitute with dried oregano)

tsp sweet paprika

½ tsp salt flakes

black pepper

water

unsalted butter

tomatoes

risoni/orzo (uncooked)

thickened/heavy cream

Dijon mustard

baby spinach leaves

Parmesan cheese,

In a shallow dish, combine the chicken with the garlic, Italian herb mix, sweet paprika, salt, pepper and olive oil. Use your hands if needed to ensure the chicken is evenly coated in the marinade. 

Heat a large, deep pan over medium-high heat and cook the chicken for 8 minutes or until just cooked through, turning once halfway. Add 1/4 cup of water in the last 2 minutes of cooking to help deglaze the pan and lift all the delicious drippings. Remove the chicken from the pan and set aside on a plate. 

To the same pan, add the butter. Once melted, add the sun-dried tomatoes, risoni, chicken stock, thickened cream, Dijon mustard and lemon juice. Stir to combine and bring to a simmer.

Once simmering, reduce the heat to medium-low so that it is bubbling gently. Cook for 10-12 minutes, uncovered, stirring regularly (see note 1 below for tips). 

Turn the heat off and remove the pan from the heat. Stir through the spinach leaves and the Parmesan cheese. Season with salt and pepper to taste. Return the chicken to the pan to heat through (slice it first if desired), then cover and allow to sit for 2-3 minutes before serving (see note 2 for tips on how to get the perfect consistency).

This delicious cozy Creamy Chicken and Orzo is a simple, one pan dish that is sure to be a crowd pleaser. No veggies to chop, simple ingredients and minimal prep time make this 30 minute meal one foe the busiest weeknights!

Creamy Orzo With Chicken

1½ lb thin chicken breasts

sea salt, cracked pepper, garlic powder and paprika (more

garlic

broth

¼ tsp crushed red pepper (optional)

orzo (uncooked)

heavy cream

tomato paste

Prepare the chicken breast. Either pound the chicken down to about 1/2 inch thickness, or cut the breasts in half lengthwise so they are much thinner. Pat dry with a paper towel. Season generously with sea salt, pepper, garlic powder and paprika. I give amounts in the recipe card below, but vary to meet your desired taste.

Heat a large deep skillet to medium-high heat. Allow it to get nice and HOT. When the skillet has heated up add about a tablespoon of olive oil. When it is glistening, add the chicken to the skillet in an even layer.

Sear chicken about 1-2 minutes per side, just enough to get a nice golden brown, crispy outside. Remove the chicken and set aside briefly.

Shift the heat to medium. Add another light drizzle of olive oil to the pan and add the garlic cloves and stir for about 1 minute allowing it to become fragrant.

Pour the white wine into the skillet and deglaze the bottom of the pan, scraping off any brown bits. Once skillet is deglazed, add the broth, Italian seasoning, and orzo to the skillet and stir.

Bring the orzo to a light boil. When the orzo comes to a light boil, add the chicken back into the skillet and cover. Heat for about 10-15 minutes, or until the chicken has reached 165°F internal temperature and the orzo is al dente and a lot of the liquid has been absorbed. During this step, stir every few minutes just to make sure the pasta isn&#39;t boiling too much or sticking to the bottom of the pan. If it feels like it&#39;s a rolling boil, lower the heat slightly.

Once chicken and orzo is ready, shift to low heat. Add the heavy cream, tomato paste, and parmesan. (You can remove the chicken from the pan to make stirring this a bit easier, but I just sort of shift things around.) Once creamy, add the spinach and stir into allow it to wilt.

Remove from heat and serve!
