Easy Corn Pudding

eggs ((room temperature))

butter

white sugar

half and half

cornstarch

vanilla extract

nutmeg

white shoepeg whole kernel corn, drained ((1 can))

cream-style corn ((2 cans))

Preheat oven to 400 Degrees fahrenheit.

Spray a flat 9x13 baking pan with cooking spray.

In a large bowl, lightly beat eggs. Add melted butter and sugar.

In a small bowl, whisk together the milk and cornstarch until smooth.

Stir the cornstarch/milk mixture into the egg mixture.

Add the vanilla extract and dash of nutmeg.

Stir in the drained corn and creamed corn. Blend well.

Pour mixture into prepared baking pan.

Bake for 40-50 minutes or until the top is browned and the center is set.

Homemade Creamed Corn

onion (finely chopped)

flour

half and half ((milk or cream will also work))

Italian seasoning

garlic

salt

black pepper

corn

In a medium pan, melt butter over medium-high heat.

Add onion and cook, stirring occasionally, until softened and beginning to brown.

Add Italian seasoning, garlic, salt and pepper. Cook 1 minute.

Stir in flour until completely absorbed, then whisk in half and half.

Stir in corn, and cook over medium heat until thickened and creamy, about 5-10 minutes. Serve.

c. frozen corn, defrosted

I made this dish last night. Rave reviews!

I tried it this weekend and it was a hit! The bacon adds a savory flavor to it that makes it stand out from other corn casseroles. Everyone wanted the recipe so keep copies on hand.

Followed recipe except used chili powder instead of paprika. I made two batches hopeful to use the next day at a get together. We were not super impressed, just  not creamy like the video made it seem. With that being said I did not  want  to waste the second batch so we added the other half of cream cheese. (making it 8 oz.) This made a huge difference. Will be making again with the added cream cheese. We might try jalapeños or green chilies next time as stated in other reviews.

My whole family loved it. I used half white corn and half yellow and my family loved it even more. So yummy and so easy to make!

Southern Creamed Corn

yellow onion

tbsp butter

tbsp minced garlic

tbsp all-purpose flour

sugar

tsp black pepper

tsp sea salt

tsp cumin

evaporated milk

asiago cheese, shredded

Cut the kernels from the corn cob over the center of a Bundt cake pan and set to the side.

Chop your onion into small pieces. Set to the side. 

Heat cooking pan to medium heat. Add butter, flour, and minced garlic. Stir. Add the onions to saucepan and cook until translucent for 5 or more minutes. 

Add corn kernels to the saucepan. Add seasonings and sugar. Allow cooking for 5 more minutes. 

Add evaporated milk and heavy whipping cream. Cook for an additional 10 minutes. 

Remove from heat and add asiago cheese. Stir. Serve hot.

Yum! I love all things corn and this recipe is calling to me. Love the addition of the spices and  garlic. This one dish could be my whole dinner. ~Valentina
